Sea Eagle sells only one stage pumps. They use to sell two stage. Customer service didn't know why they stop selling it. So I looked else where because I thought one stage pumps would take longer and you proved it. Thank you.
Generally the pumps that plug in the car require the car be running (at least my truck and CRV have to be) in order to output the power needed to run the pump.
The pumps in the video need to be plugged in order to turn on. They do not have built-in batteries. There are other pumps that have built in batteries that can fill 2-3 paddleboards before needing to recharge. I have some recommendations on by blog at texaspaddleboard.com/gear-reviews-and-recommendations/ An alternative is get whatever pump you like, then you can buy a separate rechargeable battery like this one ( amzn.to/3qA9nby ) and an adapter, then plug whatever pump you want into the battery instead of the car.

You want to hope the gauges are accurate. Get it wrong and a few minutes of sun heat on it can create a nice pop.
You just fill 2 or 3 lbs below what your rating is for your paddleboard and you should be fine
