An Italian lady made me some recently and she just called them pizzas, it's the best thing I've ever tasted. It's like eating donuts and pizza at the same time
I add parmesan in the dough, but i don't risk to fry it with the tomato sauce-if it bursts(99% of cases) its over,the butter is ruinedand may even explode. I put the other stuff in,and when its fried i make a small slice and only then fill in the tomatoes. Actually fresh,they taste even better with this pizza.👍
Oh my knees just got weak! I used to get these every time the flea market came to Belmont racetrack in the winter time. There would be a truck with a bunch of ladies making them in the back of the truck and the whole back of the truck was a vat of oil and all the calzones would be fried in there. The only difference is they would put a slice of ham in them. Thank you guys for the bringing up that memory.

I remember buying them at our local pizzeria in Brooklyn for 35 cents . I know I'm dating myself. 😆 If I may suggest what I do is drain the ricotta through either cheese cloth or let is sit in a strainer for awhile because of the water content. I do this especially when I make manicotti , ravioli , or baked ziti and lasagna. 😊 love you guys ❤️
Since I retired and moved away for NYC I haven’t had a good calzone. So, Why not make them myself. A little bit of work, but man are they worth it. Thanks for the video help in making them.

These were afraid between 325 and 350° oil temperature. You can bake them at 450° for about 10 or 15 minutes or until their golden brown.
In South Jersey these are called Panzarotti ! You guys always make the good stuff!

Canola or vegetable oil for deep frying. Olive oil is great for pan frying.

Fried is the only way to go! Baked is not the same flavor.
