Hi Vidya - I started watching from yesterday. Very interesting, simple and useful tips. Love the way you present it. We moved to the US few years and now based in Charleston.
First time in the U.S., I noticed that an Indian, especially a Malayalee housewife, has an organized, very neat and clean kitchen (close to mine). The kitchen hood (exhaust) should be installed 27 to 35 inches from the top of the counter/stove. But yours seems to be installed higher than this limit. If the kitchen hood is installed close to the cook top, the odor would be sucked out easily. And both ends of the hood and the back must be flush with the cabinets and the wall respectively, so that the odor would not escape and the fan could suck out the odor. It seemed that the builder's installer did not know the specifications/measurement. The high standards being maintained in in the U.S. is being eroded, consequent on the entry of many immigrant workers, especially the Hispanics and and other ethnic groups, in the home building and other construction work. This can be overcome only if the builders' superintendents and/or the contractor's managers conduct a thorough auditing of the job done which seldom happens. Regardless of the speed (in cfm) of the fan of a kitchen hood, unless it is a commercial-type one, I noticed that the odor spreads to other parts of the home through the return air vents of the central air-conditioner. Commercial kitchen hoods have speeds varying from 1,500 cfm and up and is very quiet because its motor is installed outsider of the kitchen wall. I replaced the builder-installed kitchen hood with a more better quality and oil-collecting and filter-free hood, specially ordered from California. All parts of this kitchen hood, including the motors, can be taken out for easy cleaning. Despite of this, the odor from kitchen spreads to other parts of the home through AC's return-air vents. The problem with the kitchen hoods with filters is that they get clogged with grease (cooking oil), and these filers cannot be thoroughly cleaned, even if cleaned in the dish washer. In order to remove the odor from cooking, I boil some whole cloves and cardamom, coffee powder, or limes (cut into pieces) in water, in addition to opening the windows and doors, even in winter. But, while boiling one of these items, do not turn on the exhaust fan. I also carry the pot with the steam to various areas of the home. Among my friends and relatives (and many other Malayalees whom I know), I am the only one who cooks in the kitchen; all others cook in their garages, saying that there would odor in the kitchen/home, if they cook in their main kitchen. A few Malayalees cook in basement with full of cooking and other odor. Some Indians build a small kitchen in their garages. But I heard that one Malayalee (software engineer and nurse couple) converted their garage into an air-conditioned kitchen. Of late, in Houston area, some builders construct a small separate kitchen adjoining to the main kitchen with powerful exhausts and doors for the room, but no windows. The best kitchens or many kitchens, especially in Midwest and the eastern states have an L- or U-shape. Some of such kitchens are also known as "Country Kitchen" with large islands.

I'm a gone case, I make Appam in dosa kallu (with a perfect lace outside ring etc.)😄That's what amma and her siblings used to do back home. Kadai's I generally try to get flatter bottom ones. Only problem we have had is with meenchatti. There is a balancer thingy we got from india for that. Kind of like an iron ring that sits on top of a stove.

i am in a luxury apt .i use glass jars for storing all spices on day due to weight shelf fell down, the repair man fixed with plastic nut but i am not confident how you are able to put soo much crockery
@@ROSELYNN4eva we used to use those when kids were small. In high school they need more food and the thermos gets bulky as it gets bigger. Hard to squeeze the lunch box into the backpack.

We used to have Henkel and Chicago cutlery before..Now we use this www.costco.com/cangshan-s1-series-12-piece-knife-set.product.100494285.html. I think we got it on sale. Our meat cutting one is from Chicago Cutlery I believe from many years back. We do sharpen most of the veg knives at least once a month.

How do you keep our appachatti and those type of vessels on that GE glass top then? We recently change to LG gas range, just for the direct flame.
