  • Here's a vegetarian taquitos recipe that uses an air fryer ¹:
    Ingredients:
    - Cilantro
    - chopped onion
    - chopped bell pepper
    - 1 clove garlic, minced or garlic powder
    - black beans or pinto refried beans
    - chopped tomato’s
    - taco seasoning
    - salt
    - corn tortillas
    - guacamole
    Instructions:
    1. Preheat the air fryer to 370°F for 8 minutes.
    2. For the filling, onion, bell pepper and garlic in a saucepan for about 3 - 5 minutes, or until the onion starts to turn translucent, stirring occasionally.
    3. Stir in the beans,salt and taco seasoning. Cook for 5 minutes, stirring occasionally.
    4. Stir in the tomatoes and cilantros, Taste and adjust the seasoning. Remove from heat.
    5. Warm the tortillas according to package directions. Wrap in a kitchen towel to keep warm.
    6. To assemble the taquitos, lay a warm tortilla on a clean surface. Spoon tablespoons of the filling horizontally across the middle of the tortilla. Starting from the edge closest to you, roll up the tortilla, tucking it under the filling and rolling tightly to make a thin roll. Place the assembled taquito on a tray lined with an additional kitchen towel. Keep covered. Repeat with the remaining tortillas and filling.
    7. Transfer half of the taquitos, or as many as can fit, into the air fryer. Air-fry for 5 to 7 minutes or until tortillas are crisp and slightly browned around the edges.
    8. Serve warm with guacamole.
