    Ingredients:
    Mustard oil
    ¼ cup
    Potato wedges
    1 cup
    Coriander with stem
    a handful
    Garlic
    5-6 cloves
    Ginger
    ½ inch
    Green chilli
    1 pc
    Water
    as required
    Green peas
    1 cup
    Jeera
    ½ tbsp
    Dry red chilli
    2 pcs
    Hing
    ½ tsp
    Tomato chopped
    1 cup
    Salt
    1 tbsp
    Red chilli powder
    ½ tbsp
    Turmeric powder
    ½ tbsp
    Coriander powder
    ½ tbsp
    Garam masala powder
    1 tsp
    Green peas
    ½ cup
    Fried potato wedges
    for topping
    Method:
    Heat a pan, add mustard oil and shallow fry potato wedges.
    Once they get crisp from outside remove them and keep aside.
    Now take a mixer jar, add coriander with stems, garlic, ginger, green chilli, some water and make a paste of it. Keep it aside.
    Then grind the green peas and set aside.
    Heat a pan, add mustard oil, gringed green peas, some water and cook it for 4-5 mins.
    On the other side, heat a pan, add mustard oil, jeera, dry red chilli, hing and let it crackle.
    Then add green chutney and cook it.
    Later add chopped tomato and cook until they get soft. Add some water if needed.
    Then add salt, red chilli powder, turmeric powder, coriander powder, garam masala powder and saute.
    Then add sauteed green peas paste and cook further.
    Later add green peas, water and mix it.
    Then add fried potato wedges, cover it with a lid and cook for 6-8 mins.
    Matar ka nimona is ready, garnish it with ginger juliennes, carrot juliennes, green chilli carrot juliennes, fried potato, and serve hot.
