ALOO MATAR
Preparation time 10 minutes
Cooking time 25-30 minutes
Serve 2-4
Ingredients
For Tempering
2 tbsp Oil, तेल
½ tsp Cumin seeds, जीरा
Prepared Ginger Garlic Paste, तयार किया हुआ अदरक लहसुन का पेस्ट
2 ½ medium Onion, chopped, प्याज
½ tsp Turmeric powder, हल्दी पाउडर
2 tbsp Coriander powder, धनिया पाउडर
Tomato Green chili Paste, टमाटर हरी मिर्च का पेस्ट
1 ½ tbsp Degi red chili powder, देगी लाल मिर्च पाउडर
2-3 tsp Ghee, घी
6-7 medium Potato,cut into cubes, आलू
1 ½ cup fresh Green peas, हरी मटर
3-4 cups Water, पानी
Salt to taste, नमक स्वादअनुसार
For Tomato Green chili Paste
2 medium Tomatoes, chopped, टमाटर
¼ cup Coriander leaves, धनिया पत्ता
2 Green chillies, broken into half, हरी मिर्च
For Ginger Garlic Paste
1 inch Ginger, roughly chopped, अदरक
6-7 Garlic cloves, लहसुन
Salt to taste, नमक स्वादअनुसार
For Garnish
Coriander sprig, धनिया पत्ता
Process
For Tempering
In a lagan or sauce pot, add oil, once it's hot, add cumin and let it splutter.
Add prepared ginger garlic paste, onions and saute it well until translucent.
Add turmeric powder, coriander powder and saute for a minute.
Add prepared tomato green chili paste and cook it for 2-3 minutes on moderate heat.
Add degi red chili powder and saute, add ghee and mix well.
Add potatoes and stir it well, add green peas, water and mix everything well.
Cover it with the lid and cook it for 8-10 minutes on moderate heat or until the potatoes are cooked.
Transfer it to the serving dish and garnish it with coriander sprig.
Serve hot.
For Tomato Green chili Paste
In a chopper, add tomato, coriander leaves, green chillies and make a coarse paste.
Keep it aside for further use.
For Ginger Garlic Paste
In a mortar pestle, add ginger, garlic, salt to taste and make it coarse paste.
Keep it aside for further use.

But more importantly, it is my father's third barsi. I lost him when I was quite young. He loved aloo tamatar Matar and would often make it for us too. It was the tastiest thing I had in my life. Ranveer da, you are a great storyteller alongside being a great chef. We have been avoiding cooking aloo matar or matar paneer as they had not turned out great when we attempted in the past using other's recipes. This time it turned out great. The kids, who used to not eat these dishes previously, abruptly became gastronomes. Kudos to you.
Since you had asked I'd like to cook Ginger Vegetable (Indo-Chinese) for my dear wife. It was our first entree in a restaurant, post-wedding. We'd both liked it so much that we used to order it each time we'd visit an Indo-Chinese restaurant in Hyderabad. Unfortunately, we can't any longer as we no longer get this dish made in the restaurants where we currently live.

Aaloo matar ki sabji and use of dhaniya spice is not the monopoly of Punjabi household only, it is cooked with same basic spices like dhaniya jeera haldi mirch along with garam masala and mix of garlic,ginger onion and eaten/relished across the India. Be it rural or small town or big metro city, aaloo matar is a very simple and common

Lovely inspiration behind simple home cooked food. Parsi Kumas is one recipie I make as a dedication to my Maternal Grand Mother. While she is no more, i can still remember most of the steps she did as she baked this lovely tea time rava & mava cake over a low flame of ambers.
My mother used to make it the same way on a flame of ambers but tody is an important ingredient in it which is difficult to get now though you can use other rising ingredients, but it's not the same.
