I was on a two month vacation in American Samoa back in 2017 and on the small island of Olosega got to trap and catch coconut crab (U'u) pronounced with a soft "Hoo-ooo" with a local.. To make a long story short if any of you ever get a chance to eat coconut crab the oil stored in the tail sack is unbelievably rich! You dip the meat in it like a butter sauce that tastes like coco oil. Be very careful not to overdo it though because the oil is, well, how do I put it? powerful! The U'u will have its revenge! By the way in Samoan language they call the small land hermit crabs "Uga". Polynesian language have many similar words.
The best part of the uga I love eating is the head. I'd eat everything inside there. I'd been told many times, do not eat the black part. I never listened. My logic was Uga travelled so far from Niue to NZ once upon a time.
