Brisket Queso

- If you love brisket, and love queso, then you'll love this recipe.
12oz chopped brisket
1# Jalapeno Velveeta
1 onion diced
1 poblano pepper diced
2 roma tomatoes diced
1 smoked jalapeno diced
1/4 butter
1c heavy cream
Blues Hog Bold & Beefy Rub
1 lime
1 bunch of cilantro
Maldon smoked sea salt
Tortilla chips
Blues Hog Raspberry Chipotle Margarita
2oz tequila
1oz triple sec
1oz lime juice
1/2oz Blues Hog Raspberry Chipotle BBQ Sauce
Melt the butter in a skillet, then add a half of the onion, and the diced poblano. Cook till they are tender, then add the tomato, and season with the Bold & Beefy. Cook for a few minutes, add the heavy cream and most of the brisket, and brink to a simmer. Add the diced velveeta, cook till melted, stirring occasionally. While the queso is simmering, make the pico. Enjoy with some tortilla chips.
To make the margarita, add all ingredients into a cocktail shaker, and shake. Pour over ice into a glass that's garnished with some of the Maldon sea salt.
