Hey Brad love your videos and I started making my own briskets with your help. They came out Fantasteic as you say. I also live in Texas (San Antonio area) and our family loves queso. I also grew up in the Northeast (NY) and queso is def a Texas thing but it is amazing. Might have to try this out, looks togood to not.

When I still lived in AZ and CO, I saw dudes in NM and AZ smoking their chilis. I'm guessing they roasted it like you did after it was smoked. The taste of those chilis were out of this world.

Yeah i use to work at Torchys and there is no other queso like it by far the most superior quesos of all quesos!
and for cheese we used cheddar that we shredded daily.

I love seeing Americans putting their twist into Mexican food, when I was younger our queso dips were pretty basic, usually consisted of Oaxaca cheese, peppers n veggies with chorizo mixed in, now people made hundreds of varieties of queso dips.
Torchy's has my favorite Queso. I get it for free for a year from when I went to my local's anniversary. Who doesn't like free Queso?!?!?

If you're trying to get closer to the same flavor as Torchys they use Land O' Lake Extra melt cheese and a red salsa base thats boils until most of the water is reduced then the cheese is shredded and added in.

For the longest time, I thought you introduced yourself as Brother Robinson. A brother I wouldn't mind having! I'd be the 'buy the meat' and 'clean up' guy! Starting to save for a ChudPit 65. Learning offset smoking on a cheap model first, then down the road, spring the ole "I need something better because of A, B and C" on the wife.
