Here on the northern California coast, our favorite crabs are Dungeness Crabs (Cancer Magister). We boil them in filtered seawater for about 15 minutes, and then they go into an ice bath like you do, but we don't salt the ice bath.

What's minimum landing size for spanners? Here, in Hawaii, minimum landing size is 4in/10cm. Spanners are known as Kona crabs & can be found in waters >15-20ft or more. Crabs are ono(delicious) when cooked but, personally...i prefer them cut into quarters & marinated in Korean kim-chee/gochujang sauce...WINNAH!...A-L-O-H-A from Hawaii

old..Sally..minella.. eat your heart out.. and as a cray fisherman off the bottom of South Australia I fully disagree with the cold shock plunge... at the end of cooking.. the best way is to slightly undercooked the crustacean so that it finishes cooking slightly during the cooling process.. they should be hung by the tail and let drip-dry/ cool.. either in fridge or just outside next to cooking area away from flies
