I love your recipes and your quick to the point explanation. Always add bellam when you use tamarind, not only it will in hance flavor but nutrelize acidity in tamarind. South Indians never cook anything without garlic, that's in our DNA. I am surprised you don't use garlic. As you know it adds lot of flavor and also has lot of health benefits. I see them at my local Indian supermarket - sometimes they are very hard and stiff... other times they are soft ... which ones are the best to buy? What do they taste like? How do you prepare them before adding to this recipe?
U can choose soft ones they will cook faster than the hard ones, first u have to peel the skin slightly and cut in to pieces..

This recipe's called Tamilnadu "sambaar" my favorite
but it not Sambar...Sambar includes Sambar Podi+Some Extra Vegetables..But it is just Dal Soup..Slight different to Sambar.
Sambar and pappu charu are not similar they're completely two different recipes
