Everything looked so good. I agree totally about carrots being underrated. I don’t buy those so-called baby carrots because they feel slimy after a few days. I buy the two pound bags and we love to chop them into chunks and roast them. They are so delicious that way. We also love munching on carrot sticks. Great ideas and they made me hungry 😊
Those "baby carrots" are actually pared down whole carrots. I agree they don't hold up. I use a lot of carrots in many different ways. Economical and tasty.
Your channel just popped up today...so I thought I would watch it...those taco bowls wow just wow...I will definitely try them on my two I think they will be impressed LOL...and thank you for the hint on the capsicums (here in Australia we call your "peppers" capsicums) ...in our horrid summers - as I don't have air-conditioning in the kitchen, I find my vegies wilt and rot within a couple of days so I tediously cut up every veg and pop in freezer...but doing it as a whole is on another level...certainly will try this thanks

It's called mirepoix sofrito or Holy Trinity I just take the carrots onions celery garlic and some bell pepper wizard in my food processor and put it in little bags in the freezer so that I have it all the time for any base for anything that I would use that in
TIP FROM me to you... you don't need the knife to get it out. use the spoon or your fingers it all works fine. however, the tool is great as well. I stopped using the knife because a lot of times I just use a butter or steak knife to cut my avos. I only use a butcher knife if I am using it to cut up other t; things.
I’ve found cornstarch thickened liquids don’t handle reheating well. Apparently the trick is to add gelatin, or what I do is flour thickens, but make a slurry of oil and flour to avoid any potential clumping.

Tapioca starch works really well. I get it at the Asian market. Plus gluten-free. 😊
Veggies are so cheap where you are 😊
Aldi has the best prices in my area and I try to only buy the veggies that are on sale when I shop ☺️
