    would baking at a low temperature first then finish with a high temperature work, or it really needs to be the other way around?

      Most of the time time, it's actually the better approach, but for lamb shoulder and whole duck (those are the two I could think of right now), high heat followed by low heat works significantly better, both in terms of browning and not over cooking the meat.

      @@w2kitchen thanks, I seen a few recipes which went the other way on something like roast beef, so just wanted to figure out when one way works better than the other.
