How to cook Zucchini Carbonara - Italian Carbonara Pasta - VEGETARIAN!

- Today I will show you how to cook zucchini carbonara: an amazing pasta! I'll be honest: I had a couple of zucchinis in the fridge so I decided to use them instead of guanciale to make a nice carbonara.
Is this the tastiest Zucchini Pasta you will ever try? Hard to answer, but it's pretty darn good!
I use some grated Parmesan cheese today to make the dish a bit more delicate to the palate but feel free to use Pecorino cheese if you prefer a more decisive taste.

Zucchini Carbonara - RECIPE
Prep Time: 10 mins
Cook Time: 15 mins
Complexity: Easy
Ingredients (2 people):
200 gr pasta
2 zucchini
1 whole egg
1 or 2 yolk
90 gr Parmesan cheese
black pepper
Procedure:
1) Cut the zucchini in quarters on the long side and get rid of the seeds;
2) Chop them in cubes or stripes and fry them in abundant olive oil;
3) Add pepper, but not salt otherwise the zucchini would release liquid;
4) When they are crunchy, get them out of the oil and put them in a separate bowl;
5) Make the cream. In a bowl put 1 whole egg and 1 yolk, add pepper, the Parmesan and whisk. If required, use some of the boiling water from the pasta;
6) When the pasta is very al dente, put it in the pan with the oil and stir on high heat;
7) remove the pasta from the heat, put it in a bowl and add the cream plus the zucchini;
8) Sprinkle some more Parmesan and serve.
9) ENJOY!
ITALIAN FOOD BOSS SPECIAL TIP: The zucchini need to stay crunchy: do not add salt in the first cooking because they would release liquid!

Just eating some black olives and wondering why we never see black olive oil? Is it correct to say; the black olives have more oil?
Robert Stephens What I know is that most of commercial olive oils are a mixture, notwithstanding the fact that there are many types of olives around.
In Salento, where I come from and it's home to some of the finest olive oil in the world, we have a type of olives that start green and then become black if left on the tree. I assume this is common with other varieties of olives too.
For me, I just need to taste the oil and I'll tell you if I can use it for my food or not! 🤣
Italian Food Boss, thanks! I do notice the taste varies in olive oils and enjoy trying them all. It sounds like making olive oil is much like blending wine? Olive oil is not as simple as I once thought.
Robert Stephens techniques vary too, from cold pressed olives to hot extraction.
Both my grandparents used to produce olive oil using our own olives from our trees, so I am quite spoiled in terms of taste.
I do have friends producing olive oil to this days: taste is amazing.
