    I only use vodka and my vanilla is very very dark. I have a huge gallon size jar filled with vanilla just hanging out. It hasn't been touched for 3 yrs. I have others that I just revive with more beans and vodka. Such wonderful stuff and so much cheaper to make and the quality is so much better than store bought. I won't go back to store bought.

      How about just putting the cut vanilla beans in the bottle of vodka? Replace the cap and let it sit in the cupboard for a year or so? Will that work?

      Does it still taste and smell like vodka? Vodka to me is strong. I've used other kinds of liquor and Bourbon is brewing faster then the rest of them.

    I made homemade vanilla for Christmas gifts about 6 years ago. Mine is still going strong. I add more liquor when it starts to drop down too low and have added a bean or 2 through the years to intensify the flavor. I'll never go back to store bought.

      Especially with the cost of vanilla today! This week at Costco the 16 ounce bottle of vanilla was $34.99! Crazy!

      @@dazedconfused5019 The Costco pure vanilla extract is diluted with water as part of their recipe formula. This recipe and any that only use vanilla pods and alcohol will be superior, the longer it age.

    I did this the lazy girl method a few years ago. Just split and shoved the beans right down into the bourbon bottle. It gets better every year.

      🙂 I did the same thing with Brandy (Bourbon beans) and Tequila (Mexican Beans). I have a bottle of Bourbon and I will be doing the same thing. I love the way they look.

      That is exactly what I was thinking of doing it! Then I could pour whatever amount into smaller bottles as gifts if family or friends wanted some.

    Pro bartender here retired. I make my own vanilla extract, Irish cream and Kahlua. What you need is an assistant, a taste tester, a happy cheer leader. Hehehe...I'd work for free.

    The original vanilla comes from Mexico. Cortez drank a chocolate drink with vanilla made by the Totonac Indians and the rest of the world then fell in love with vanilla. Madagascar makes Madagascar vanilla beans. There’s also Tahitian vanilla beans. Indonesia and New Guinea make vanilla beans. The problem is fewer & fewer farmers are growing it. Have you ever tried simply placing your beans in the alcohol? Then after the extraction process, snip the end, run your fingers down the bean & voila, all the tiny seeds come out. You don’t have to cut & scrape & make a mess. It’s much simpler to just squeeze them out after they’ve soaked.

    Captain Moran Spiced Rum is aged 1 year before being bottled. I have used it for a long time and add some fresh beans with some old "mother" in order to make a fresh batch. I give it as Christmas gifts and I have always received great comments throughout the years each time someone uses it in a recipes. I make Panna Cotta with it and it is TO DIE FOR. Put it in your roasted Strawberries and you will be famous. BTW, GREAT video.!!!!

    i watched a lady that has been making vanilla for decades and she cuts the beans in half then just cuts them length wise on one side, she puts 2 1/2 beans per pint and won`t use them till they age 18 months

      Yes, it all depends on how soon you'd like to be using that precious vanilla~ best part about Vickie's way is that you get off to a roaring start, so to speak. By going heavy on the beans initially, not only is she able to use it sooner, it's a super strong 'base' to continue adding to~ for years & years if you wish. Plus, it's the way to go if it's your first time, then you can do the fewer beans/longer steep method as well~ w/out having to buy store product for a year or two while you wait. =)

    Let me help you out:
    In a sealable glass jar, submerge vanilla beans (split lengthwise) in alcohol. Shake every few days for at least a month. Done!
    Use at least 5 vanilla beans per cup of Alcohol (Bourbon, Vodka, Rum). The longer you do this, the better.
    This video is so slow and could have been made in less than 5 min with all the same info. The pace was driving me crazy! I appreciate everyone who puts something positive and helpful out for the rest of us so thanks for that.

    Vickie I took your recipe and gave it a twist... I used Bourbon & Vodka half and half... I did this about 6 months ago after watching this video... The results are... Awesome! I even ordered the weck jars you used off amazon... Absolutely love those jars... I've ordered more since I started... Thank your for introducing me to weck products... also.. thanks for this recipe and all your hard work... I'm a subscriber now so I wont miss any more of your recipes...

    I use a good bourbon for my vanilla extract, find it lends a deeper, more complex flavor. Delicious for baking!

    I made close to a gallon of vanilla extract divided among 3 large jars back in late 2014. I shook the containers daily for a month, then every couple of days for 2 more months. After that, just occasionally. One year later, I had such a rich infusion! I gave a 4 oz. bottle to each family in our church who did any baking. The following year I think was when the prices skyrocketed. I was so happy that I had made mine when the beans were more affordable.

      Yes, this is what I plan on doing, and keeping on hand. This is two years now that prices have been so high, so a little planning ahead means we can enjoy vanilla without the insane high prices!

    Thank you for this video! I'm glad I saw it through to the end (thank you for focusing up, you look beautiful!). Last Spring I tried for the first time to make homemade vanilla using materials from 'King Arthur Flour' (six two-ounce bottles with one bean each) and combining their and 'Noreen's Kitchen' techniques. Kept it in the back of the pantry, shaking every week, for six weeks marking the calendar for the day I could bring it out, and when that day finally arrived, in late May, it just did not have the smell or intensity that I had been waiting for. So, I've kept it going, but now, thanks to you, I'm going to add more beans and even if it does take a year---I'm in for the long haul! Thank you for this encouragement, Vickie's Country Home!

    Hi! Someone else may have already commented about this, but it's actually supposed to be in 1 oz of beans for every 8 oz of alcohol. A lot of people use recipes that skimp on the beans alcohol ratio.

    Hi Miss Vickie, I've been making my own vanilla for about 5 years. I use Vodka with 80% alcohol, because it enhances the flavors of the different Vanilla Beans. My favorite vanilla is Tahitian, which would probably be the Papua New Guinea variety, which has a fruity flavor. I have used grade A and grade B to make Vanilla Extract, and the only difference I noticed was the size of the bean, or that the bean was drier. But there was a considerable difference in the price of grades A & B. There is a bigger outlay to make your own Vanilla Extract, but it is well worth it, and it lasts forever.       It really is worth it, and the cost goes down as you renew it with more bourbon (or rum if that is what you use), eventually more vanilla beans. But it really is amazing! God bless!

      Grade A beans are considered "gourmet" quality. That have a higher water content for making vanilla paste.
      Grade B beans have less water content so you get more solid matter per unit weight.
      Since you are planning on making extract use Grade B since you will be getting them down with the vodka, rum or bourbon.

    I bought a case of vodka years ago and tons of beans made vanilla extract and have it still. I bought beans a few years ago and they were high thinking I would gift changed my mind. I have cases in my closet I will never buy vanilla at the store again.

    Renewable.. Great idea. I like to use an expensive run.. Usually I don't care but I like that for vanilla.. But to keep it going-Too cool.. Thanks for sharing..

      I know. When I found that out, it made so much sense. So now I will keep it going. Add more Bourbon to top it off, and more vanilla beans when needed. No more expensive vanilla!

    I made vanilla a couple of years ago. No problems but didn’t realize I could keep it going. Forget how long I let it sit. Starting to get low so ordered some beans today and this time hopefully I will do even better. Thank you for sharing.

    Compared to what I would have paid at the store, it IS cheaper to buy the beans (Madagascar) and the bourbon separately. I made my vanilla extract on January/2021. I forgot I had the extract until I was cleaning out my closet on February/2022. What a nice surprise when I found it and the flavor was fantastic. The longer it sits, the BETTER it tastes. I also made mine with the same bourbon as yours.

    USDA minimum requirement to call it extract is .83 ounces of vanilla beans to 8 ounces of alcohol. If you split and scrape and cut the vanilla beans the extraction process can be finished in 4-6 months although leaving longer allows the over 200 flavonoids of the beans to continue to develop. Always weigh the vanilla beans because there can be quite a range in number of beans per ounce depending on size moisture content etc. Perpetual vanilla is a myth. If you add more alcohol to your extract you are diluting the extract to flavored alcohol unless you add an adequate number of vanilla beans and start the extraction timer over.

    Omg. I used 10 Tahitian vanilla beans for 10 oz of vodka. It`s been 3 months and it smells amazing. Made a pecan pie and the vanilla really enhanced the taste of the pie.

    When I worked in a grocery we had to put it in the safe as it cost $7.00 a bottle (real vanilla) back in 1970. People would steal the real vanilla so we put it in the safe for our customers.

    I just started making my own vanilla extract but I used vodka. I plan on doing a couple more batches with some other liquor. I just hope that nobody from my church sees me going into or out of a liquor store lol. I live in a small town and decided to go out of town to buy the vodka. I was embarrassed to even walk into the store. I felt like everyone was judging me or something. I also didn’t know where to look and had to ask for help.

    Good Morning ! I tried the Bourbon and was not fond of it though it was richer than regular vanilla ! The next time I make vanilla, I will use half Vodka and half bourbon ! I think that's a good compromise !!! Now I just need to find some reasonably priced vanilla beans ! :} Thanks for the Video !

      a lot of people use imitation vanilla from the market. So the genuine vanilla may seem overpowering.

      That is the wonderful thing about this - you can use those old beans (although I would try to add some fresher ones too), and just keep refreshing it with more liquor as you use it up.

    thank you Vicky! Many herbs and spices went up last year. I make my own elderberry syrup for flu season. Elderberries went from 9$ to 35$ from my regular source. I searched and found it for 15$ and bought 2. This year I'll try to grow the bushes again. I was unsuccessful twice :(

    I made vanilla extract with rum the last time and found that it altered the flavor of my more delicately flavored baked goods, like snickerdoodles too much. That was an expensive lesson learned.

      There is a man that has been making extract for 28 years that said he tested all kinds of liquor and the best one was Captain Morgan's coconut rum.

      I've watched several videos on how to make vanilla extract and one lady said that since the vanilla she makes is so much more intense as she lets it set for a minimum of 18 months before using or selling it, she uses only 1/3 of the amount of vanilla extract a recipe calls for. Hope that helps.

    I’ve been making vanilla extract fir years but like vodka better. To me bourbon overpowered the vanilla. I just keep adding more vodka and once a year add more beans

      I do not remove the beans, just add more liquor when it is low. If the beans seem to lose flavor, you could remove them, and you can always add new beans.

    Well Madagascar has been through drought on a recurring basis as well as at the time of the recording the nation has been through several locust infestations, that's how the vanilla prices have been shot up at the time.

      Sure. Whisky is essentially the same as bourbon, as far as I know the only difference is ALL bourbon is made in Kentucky. They will tell you their recipes are different, but the differences are the same as differences in vodka.

      You can put about 5 beans for every cup of bourbon/rum/vodka. Use any bottle, jar you like and make as little or as much as you like. You're welcome.

      6 cups = 48 fluid oz. 5 beans per cup or 8 fluid oz.

      @@redhen689 - Five beans per 8 ounces… If I were to make a 1 gallon jug that means I would put 80 beans in the gallon jug? I don’t think so… Another video I saw him up showed 15 beans per gallon jug.

      @@fernwehchronicles193 size and weight of beans varies enormously so counting beans is not accurate. FDA rules for true vanilla extract require 1oz beans to 8oz liquor (70-100 proof). Vodka should take +_ 12 months and dark/dominant flavored liquors like rum and bourbon, 18-24 months. Best to slice and open the pods and ensure they're covered by the liquor. Into a dark cupboard, shake occasionally . Good price deals and advice from coops like Indrivanilla, Vanilla Bean Kings, but also lots of misinformation online unfortunately

      No, neither the fridge. Put it in a dark container that's tightly sealed or put it in a bottle of vodka so they don't mold or dry out.

    NO NO NO!!!! You DON'T split vanilla beans for extract! Slice them across to fit in jar or put in whole.

      I split mine, leave some whole because I like to see them in the bottle. I also cut some short so they can always stay at the bottom of the bottle.

    Did that vanilla come out good because those beans look absolutely dry and skinny. Thanks for sharing where you got them because I was going to join one of those co-ops.

      It came out great. Some of the beans were older, so I added extra, but since they were in liquid they rehydrated.

      I’m not sure if there is an exact number. I would put a minimum of 5 to a 750 L bottle, but I put a lot more to give it more vanilla taste.

      I make mine with 5-6 beans per cup of vodka and let it sit at least 6 weeks. It is awesome and starts getting dark right away. I just take some finished vanilla out and add a little more vodka to the batch. Been making it this way since 2013 and will never go back to store bought. I get Madagascar beans on eBay. I’ve tried using light rum but it takes too long before it makes good vanilla.

      To sell vanilla it has to be 1 oz. per cup of alcohol. So, that is the strength I use. Most don't sell by the ounce. Looks like you had at least that amount.

      I've saw someone make it with water and the vanilla bean in a blender, but I can't imagine the taste of it. she said it was excellent.

    Perhaps making two jars and then making one jar each time one runs out would give a natural, 'aging based on demand' balance going for you.

    Thanks Vickie, I started my first vanilla extract six weeks ago. I used rum, only because we had brought a case back years ago from the Virgin Islands and we still had three bottles 😂 I was going to strain the bean and used in sugar, but I like this better.

      When it comes time to add more rum, strain out most of the vanilla extract, then add more rum. That way you have some ready to go. Add more beans as needed.

      @@VickiesCountryHome I decided to make some "double-fold" vanilla, which takes 10-12 beans for 16 oz. and about six months (though I'll surely be getting some out for use before six months is up -- as the last thing I want to do now is spend more on ready-made vanilla extract!). The batch I already started is with Madagascar beans and am looking to -- when I can afford another 10-12 beans -- making a batch with Mexican vanilla beans also double-fold. (I don't know why they don't just call it double-strength, but it appears in vanilla extract jargon there is single-fold and double-fold!)

    Great, informative video. But I think you're paying too much, buying individually packaged vanilla at Costco. You can get better deals surfing Amazon and buying bulk beans in bunches of 30 or more at a time. Unless you really like the Costo product that much.

      As far as what I have researched, you can keep indefinitely. Just add liquor and vanilla beans as needed.

    Vanilla is from America though. Yeah it’s expensive but it requires a lot of labor. There’s a reason why they enslaved the Indians.

      I Have been making my own for the last 40 years I just put my beans straight in the bottle of either rum or vodka about 12 beams but I let mine soak for a year before I touch it
