Steak Fries Recipe
Ingredients:
4 medium gold potatoes, organic
½ cup Aleia gluten free bread crumbs, seasoned
2 Tbsp. gluten free flour, Bob’s Red Mill 1 to 1 baking flour
2 tsp. Rockin Robin’s Italian seasoning
1 tsp. Garlic powder
Pinch of salt
Olive oil
Directions:
Preheat oven to 375 degrees F.
Rinse the potatoes and then slice them in half lengthwise. We are leaving the skins on by the way. Cut each half in half and then depending on how big the potatoes are, cut each half into either 4 or 5 wedges. You want the wedges to be about ¼ inch thick.
Place all the slices into a bowl of water to soak anywhere from 30 minutes to overnight. Soaking will help release the starch in the potato and help them to crisp up.
In another bowl, combine the bread crumbs, flour, Italian seasoning, garlic powder and a pinch of salt. Stir until fully combined.
When you are ready to cook the potatoes, drain the water and if you have one, toss them into a salad spinner to remove as much water as possible. Pour them out onto paper towels to blot dry. Dry the potatoes as well as you can as this will help with them crisping up.
Pour the potatoes into a bowl and drizzle with enough olive oil to coat all the potatoes well.
Prepare a baking sheet with a piece of parchment paper. Pour about a tablespoon of oil on top of the parchment paper and spread it around using either your hand or a pastry brush to cover the whole bottom of the pan.
Dip each oil covered potato into the bread crumbs, covering all sides of the potato and then place them on the pan. Dip each potato slice into the crumbs, coat and then place on the pan so they are not touching each other. Season with salt.
Place the pan into the oven at 375 degrees F. for 20 minutes. Once they look like they are browning up, turn them over carefully. Add another drizzle of oil if they look dry and season with salt. Increase the temperature to 425 degrees F. and cook an additional 20 to 30 minutes.
The potatoes are done when they are browned up and crispy! Enjoy!

I wouldn't use olive oil however, that temp is getting close to the smoke point of that oil. I'd use avocado oil or coconut oil.

If you set them on their skin side down you don’t need to flip them

This would be good with just about any vegetable really. You could even dip these potatoes into so I sauce or ranch dressing as well as plain old ketchup or barbecue sauce. Thanks for this great recipe.

So I just made these and I used a mix of red & white small potatoes. I also tried Panko Bread Crumbs. They were nice & crisp but I did find them a little bland, but that’s on me. I’ve never used Panko Bread Crumbs & didn’t really compensate for the lack of flavour with my spice. But they were definitely worth trying again 👍. They turned out nice using the Big Green Egg & I made fresh Bread 🍞 & Some Chicken wings too 🔥🇨🇦
