So far, I'd say Hera because her vengeful actions and her relationship with Zeus seem to have more layers to it and they drive the plot forward. Hermes is my another favourite character because of his contribution to the plot as well.
Not only is she super stretchy she is strong and durable, she managed to shield her kids from the explosion and survive, and she was strong enough to hold onto the rocket whilst holding a van.

Even if people are not always crazy about sequels (not 100% of the time), I will say that the second movie really gave her good character development, even Mr. Incredible (although hers was a lot more out in the open). They took what they had from the first movie and Disney was able to build off of that. That’s why I really like Incredibles 2.

If elastigirl and frozone fought frozone would win but I think elastigirls ability can be good for both fighting, saving people and stealth missions whereas frozones ability is only good for fighting and saving people. Also I feel like if Violet was older and learnt to properly use her powers she'd be unstoppable.
