  • Harvest season means apple season! And this is the perfect way to enjoy fall, with apple cider donuts! These aren't hard, and if you have great apple cider like I do from Green's Fruit Farm, Elysburg, PA, you're in for a treat!
    APPLE CIDER DONUTS
    Ingredients
    1 cup granulated sugar
    5 tablespoons unsalted butter, at room temperature
    2 large eggs, at room temperature
    3-1/2 cups all-purpose flour, plus extra for work surface
    1-1/4 teaspoons table salt
    2 teaspoons baking powder
    1 teaspoon baking soda
    1-1/2 teaspoons ground cinnamon
    1/2 teaspoon grated nutmeg
    1/2 cup low-fat buttermilk
    1/3 cup boiled apple cider
    1 tablespoon vanilla extract
    Canola or safflower oil (for frying)
    Cinnamon sugar (1-1/2 cups sugar mixed with 3 tablespoons ground cinnamon) or confectioners' sugar.
    Instructions
    In a large bowl using a hand-held or standing mixer fitted with a whisk attachment, beat together sugar and butter until mixture is pale and fluffy, 4-6 minutes.
    Add eggs, one at a time, beating a minute after each. In a medium-size bowl, whisk together flour, salt, baking powder, baking soda, cinnamon, and nutmeg; set aside.
    Pour buttermilk, boiled cider, and vanilla into sugar/butter/egg mixture. Mix well, and don't worry if the mixture looks a bit curdled; it'll smooth itself out.
    Add flour mixture and combine gently just until fully moistened.
    Line two baking sheets with waxed paper or parchment paper and dust generously with flour.
    Turn dough out onto one baking sheet and pat gently into 3/4-inch-thickness.
    Sprinkle dough with additional flour, cover with plastic wrap, and place in the freezer for 10 minutes to firm up.
    Remove dough from the freezer; use a lightly floured 3-inch doughnut cutter (or two concentric biscuit cutters) to cut out doughnuts with holes. (You may gather the scraps and roll again as needed, but you may need to chill the dough more to firm it up.)
    Place cut doughnuts on the other baking sheet as you go; then transfer to the freezer for 5 minutes to firm up again.
    Line a plate with a few layers of paper towels and set it nearby.
    In a Dutch oven or large pot, heat 3 inches of oil to 370° (test with an instant-read thermometer).
    Drop 3 or 4 doughnuts into the oil, being careful not to crowd the pan. Cook until browned on one side, about 1 minute; then flip and cook until browned on the other side, about 1 minute longer.
    Repeat with the remaining dough (if you find that it's getting too soft as you work your way through the batches, pop it into the freezer again for 10 minutes).
    When doughnuts are cool enough to handle but still warm, sprinkle all over with cinnamon sugar or confectioners' sugar. Serve immediately.
    BOILED CIDER--You can boil your own cider by simmering 1-1/2 cups of fresh apple cider down to 1/3 cup in about 25 minutes--it just won't be as concentrated as the commercial product.

      It's worth it if you can, but if you can't find good cider, the concentrate is always an option!

    Hello, I just found your video and wanted to tell you they look amazing, and if I could also ask, can these be baked? I am not able to eat fried for health reasons so I am trying to find recipes I can slightly modify. I wonder also have you done these with honey versus sugar? I am not trying to be a pain, I just don’t want to have to let go of EVERYTHING! I have found a good flour, (Einkorn flour) that I can tolerate so now it is just the other substitutes. I am trying to ask experienced chefs/home cooks to hear if they are familiar or just with their/ years of experience know that possibly another ingredient could be used. I appreciate any lessons and I thank you for the wonderful videos and teaching me/us! May God bless you and yours and have a wonderful holiday season!!😊👏👏👏✝️❤️

      You can bake them. Just be aware that the texture is going to be different. They will be denser and more cake like. As for sweeteners, 2 natural alternatives are honey and maple syrup, although you may have to experiment a little. Another is agave nectar and stevia for sugar substitutes. Depending on the honey, it can be two or three times sweeter than sugar. For every 1 cup of sugar, replace it with 1/2 to 2/3 cups of honey. To replace white sugar with maple syrup in general cooking, it is ideal to use ¾ cup of maple syrup for every one cup of sugar. When it comes to baking, that same amount is used but also be sure to reduce the amount of overall liquid in the recipe by about three tablespoons for each cup of maple syrup substituted. Stevia has zero sugar so a good alternative is Diabetic. Since it's about 30 times sweeter than regular table sugar, it only takes a few drops or packets of stevia to replace the white sugar usually needed in traditional recipes. One packet of stevia is equivalent to about two teaspoons of sugar. Twenty-four packets equal one cup of sugar. Because agave nectar is 1.5 times sweeter than sugar, less of it is required for recipes. For sweetening, substitute ¾ cup agave nectar for 1 cup sugar. When using agave nectar as a sugar substitute for one cup of sugar in baking, the following adjustments are recommended: Increase flour or cornstarch by ¼ cup. Hope this helps!

    I'm in NC, and I love apple cider doughnuts. I don't always have access to great apples. But I always have access to muscadine and scuppernong grapes, my husband gets them for free. Around here muscadine cider is the big thing. Do you think it would work? Or should I just experiment? We have 4 1 gallon bags stuffed full in the freezer.
