New Smoker : Old Country - Pecos

New Addition- scored on a baby offset smoker with some mods for $300 , Old Country Pecos , came with some tel tru gauges I might re-drill , some lavalock gaskets ,tuning plates and charcoal boxes one from lone star grill . Lots of ideas and cooks coming up but first we have to figure this thing out , see if we can get to know the pit and learn to manage the fire along with the cold and hot spots to determine if that baffle will stay or not.

I have that smoker as well. Haven’t made any alterations to it. Never burned a brisket, ribs, pork butt, loins or chickens. Definitely cook and find the hot spot, but it does well for the price. Makes damn good que

I bought the brazos few years ago. The one thing I learned was never again buy a smoker where the diameter is less than 24” round. You may also wished you didn’t buy one less than 24” round.
