You two have knocked it out of the park again! I'm wondering if adding a bit of tapioca starch to the retained water while it's still hot would make the "cheese" firm up enough so it could be sliced. Hmmmm.....
This is a sign. I just got back from the store, for some reason I got carrots which I almost never do. I have no choice but to make this recipe. I've tried this before with sweet potatoes and purple carrots but I think I got the ratios all wrong, or maybe it's a psychological thing, purple cheese isn't exactly appetizing. But I trust you guys on this one!!
The potato peels won't blend well. But do as you wish. Peeling potatoes doesn't negate a whole food plant based diet. Do you eat the rind of watermelon or cantaloupe or the shells of nuts? It's more about not processing them and removing important nutrients.
@@PlantBasedBistro Rind and shells are a little different. They are impossible or hard for us to chew and digest and most don't have any nutritional value. The potato Skin on the other hand has a lot of value. For cooking and for eating. It protects the vitamin C and has many nutrients in itself. I already blended potatoes (with skin) for soup. Works great. Just needs some more blending if you don't want little skin pieces
How do you justify not peeling your carrots when you do peel your potatoes? I.e. why wouldn't the carrot skins be just as "gross" in your cheese as would the potato skins? Not sure I follow there.
Easy. The body is made to regulate. There is a ton of information out there about this. Dr McDougall, Dr Barnard, Mastering Diabetes, all have information on this. Carbs are not the cause of diabetes. The biggest thing is caloric intake and weight loss. I eat 1800 or so calories a day and still losing weight. I'm down about 50 lbs since this all started.
A lot of diabetes has to do with intracellular fat, so surprisingly you can cure it while eating only white rice and fruit for example (kempner rice diet). However some people have trouble losing weight long term on high starch diets because the calories per pound of food is just too high and they overeat carbs after some initial weight loss. It depends which carbs you choose though. Rice has almost twice the calorie density of potatoes. Something like butternut squash and many fruits will have even lower calorie density, more fiber, be more filling, and spike blood sugar less.
Take the potato peels and air fry them into crisps (oil and salt are optional) then dip them into the cheese!
Smoked paprika would be awesome in this.

Lots of ways to do things. Peeling carrots hasn't changed the flavor in my experience.

Sure. Would make it firmer. We found if you leave it in the fridge for several days it can firm up that much on its own.

I like to use unpeeled Yukon gold potatoes. The peels are so soft they disappear when blended in the vitamix.
That could work, but the peels can also interfere with the starch structure. Normally we don't peel potatoes or carrots though.

Potato skins are very different from the potato flesh where carrot "skin" isn't really any different than the carrot.
