Thank you Cynthia for sharing this and it's the same thing that I heard even from experienced people in the NGO sector before diving into this sector. The real problem isn't that people don't want to volunteer. The biggest problem is that people are so caught up with their daily struggles that even volunteering without a stipend or any money to show is very difficult.
This is infact the best video made ever about volunteering with the UN. I am a former Red Cross volunteer and currently a Global Communities Program officer currently on contract. All I can say is that volunteering or interning are the only way to get a foot in the door in this sector plus learning the local languages. This is just a job like any other but once you got these, then the jobs will always be flowing.

Depends on whoever is hiring. Mine took a month to called for interview and a month to get feedback. It could take shorter or longer
