- ✨ Today’s the New Year’s Eve. The recipe to celebrate the end of 2020 is kimchi, which has been highly requested by many of you. We’ll be making chonggak kimchi and kkakdugi, both of which are made out of ponytail radish. Ponytail radish is right in season- super crunchy and sweet. You may think that kimchi is hard to make, but it’s actually really easy- anyone could make it. Like how the fresh kimchi ferments over time, we hope your 2020 has been a maturing year. ✨ [Ponytail Kimchi(Chonggak Kimchi)] 3kg
Ingredients : 3kg Ponytail radish, 1/2 Green onion, 100g Chives, Salt
Blending Ingredients : 1/2 Onion, 1/4 Pear, 7tbsp Fish sauce, 2tbsp Salted fermented shrimp, 1 Ginger
Sauce Ingredients : 1+1/2 cups of Red pepper powder, 4tbsp Minced garlic, 2tbsp Sugar, 2tbsp Plum extract
Sticky rice porridge : 2+1/2tbsp Sweet rice flour, 2 cups of seafood stock
1. Use a knife to remove excess branches of roots of the radish and the soil trapped between the radish stem and the main root. For big radishes, you can sheath them into half or into 4 and scatter sea salt to pickle for an hour and a half to 2 hours front and back, then wash clean and remove moisture.
2. Slice the green onion diagonally and chop the chives into three pieces. Peel the asian pears and onions and chop into big pieces before blending.
3. Mix the sticky rice paste ingredients in a saucepan on medium heat. Stir well until the mix bubbles and thickens, which is when you turn off the heat and set aside to cool.
4. Blend the blending ingredients and mix with rice paste and seasonings to make the kimchi paste.
5. Mix the radish with kimchi paste, green onion and chives in a large bowl.
6. Place the radish and chives nicely inside the kimchi container and ferment them for a day or two in room temperature before storing in the fridge.
✨ [Cubed Radish Kimchi(KKakdugi)] 2kg
Ingredients : 1kg Radish, 1/3 Green onion, 60g Chives, 2tbsp Salt, 6tbsp Red pepper powder
Sauce Ingredients : 1/3 Blended onion, 3tbsp Salted fermented shrimp, 1tbsp fish sauce, 1/2tbsp Minced ginger, 2tbsp Sugar
Sticky rice porridge : 1tbsp Sweet rice flour, 3/4 cup of seafood stock
1. Remove the excess branches of the radish root and clean the radish with a cleaner brush and chop into squares in 2 cm width. Slice the green onion diagonally and chop the chives in 3 cm length.
2. Pickle the radish in salt for 30 min and remove moisture on a strainer. Then mix the radish with pepper powder in a bowl to add color. (tip: Pickle the outside of the radish only; do not wash with water but remove moisture on strainer.)
3. Mix the rice paste in a saucepan and stir well in medium heat; turn off the heat once the paste bubbles and thickens and set aside to cool.
4. Mix the rice paste and seasonings in a bowl to make the kimchi paste.
5. Mix the seasoning ingredients well with the radish, chives and onions and place neatly inside the kimchi container. Ferment the kimchi for a day or two before storing in the fridge.
(tip: You can add salt to add flavor depending on how much the radish has already been pickled)

Hello and thank you for your beautiful recipes! They work every time! Unfortunately I live in Italy and I cannot find fermented shrimp anywhere, not even online. Can I skip it? Can I substitute it with salted preserved anchovies? Thank you.
You never got an answer, but I believe anchovies would work, also some tablespoons of fish sauce would do. There are several kinds ranging from chunky sauces to ones resembling broth.
