I can tell you, the bigger the catfish, the less flavor it has. Get smaller and split down the middle, better and fry in hot canola oil. Great fried catfish .
Soak it in Sunkist or any other orange pop overnight first!! Roll it in whatever mix you want after. Sounds a might crazy, but you'll never do it another way after!!

They got away with not hiring an actor to play Pokey Pete. He's just described by the other actors.
Pete couldn't talk. that is why the kids made fun of him. I doubt they were being cheap with the production of the show.
