I have dear friends who moved to Cuenca last November. They LOVE living there and are the happiest I’ve ever seen them. Going to visit them next year and I can’t wait.

Cuenca looks like an amazing place to stay either as expat or on vacation. Was in lisbon for awhile, then going to funchal Madeira. I'll see how that place is.many expats there too

I've been vegetarian for 15 years,once vegan for 17 years ,I am super surprised that there are so many vegan/ vegetarian restaurants in Ecuador & all over S.America /C.America !!! I'd love to visit Cuenca someday very soon with my mom ! She's vegetarian also ! 👍👍💜🥁🐉🎤🎶💞
Yes, every large city had some options for us! Especially cities that get a lot of tourism. Anytime we found ourselves somewhere that didn't have local options we just bought some veggies from a market and cooked up a stir fry :) I hope you make it to South America and enjoy your time there!
