We are overloaded with eggs too. We give some away. I have pickled a lot this summer.

I put my elderberries in our dehydrator

Just got done dehydrating 3 pound of fresh elderberries and got a quart and a half of berries .

I put mine in freezer then take berries off then put a pint of elderberries in a quart jar then add 100% vodka and let it sit in cupboard for six weeks and drain and keep

Just leaving them spread out thinly on the cardboard! Naturally drying out.
