I think we have a different recipe or version to yours, we fry equal amounts bulgur and onions, bell peppers with a tomato and pepper paste before adding chicken stock. Once the bulgur is cooked we cover the pan with a clean tea towel and a lid and leave it to cool for 20 minutes, the tea towel absorbs any excess steam. This is the method i learned from my grandmothers Turkish neighbours in germany. The salad is similar as a personnel prefferance we use alot more diced red onion, we like the mix of fresh and cooked onions and bell peppers and serve the mix in lettuce leaves or use lavash.

Be careful not to make that facial expression (slightly wincing your left eye) when you talked about starting first with the bulgar because it would take some time to cook. That imparts a negative feeling to something completely positive, which is good time management.
