    As I understand it, carrots eaten raw do not release the same vitamins etc that they do when cooked. Best is to cook them 'al dente' which gives the best of the carrot.

    DJ, i love any veg, you tell us you were a chef, you emptied all that veg stock down the drain, why not freeze and save for a soup. Even the veg scraps binned, could be washed and used in soup. My late Dad was a chef and served his apprenticeship at Claridge's many many years ago. Nothing went to waste during those bleak years.

    When my mom used to boil cabbage she would give us the water in a cup with pepper before dinner and we never had spots growing up it always tasted good

    As a retired chef my heart sank as you chopped the vegetables and boiled them 🙁☹️Not sure of the time line. When you got back from 🗽NYC. Having spent time eating the American dream 🍟🍔🍕🌭🍳🌮🥪🥓. Going from one extreme to the other is not a good idea. Eating as 99.99% of the population knows is just common sense. Sadly, we can't all find the time to shop, prep, cook, store. Many factors effect our daily lives. Time, cost, the desire to work at it. I truly wish you well on this path. As I said a few videos ago. 70yrs old, heart failure, Prostate cancer. Over weight. And a diabetic. Most of which are my own fault. Anyway, stick with your plan ( oh by the way, what happened to the new suit 🤔remember the one you couldn't fit in to. The reason for your last dieting series of vlogs) Life is full of ups and downs, much the same way as the nations weigh problems. Allan&Family

    The outside leaves of cabbage contain the most iron. The darker the leaf the more healthy it is.

    As a former chef i am sure you have lots of ideas DJ!, the problem with these crash course diets is that when you start to eat normally, you put it all back on! chill DJ lol no need to hurry, 5 a day, walk alot, and just in general live a healthier lifestyle. Didn't you do keto for a few weeks too? and then slimming world for a few weeks?

    Layer the hell out of that food with herbs, spices etc. My Mrs just wrote a book regarding the benefits of layering your food with super herbs and spices. The difference in flavour is amazing. DONT BOIL!! Steam or roast.

    Typical extreme reaction dieting.
    Going from American junk food to the other extreme.
    This is really silly.
    A healthy well balanced diet is key.
    The body does need some fat and salt.
    How long will it be before you're back on junk food?
    I'll give it a week or two.
    I remember when MacMaster went on a healthy diet and it lasted all of 3 or 4 days.
    It does get the views up though 😂

      I tend to agree with trending. You do need salt and fat and a little sugar did no harm. Extreme dieting doesn’t work. It’s slowly slowly catchy monkey that works.

    I take my hat off to you, to do what you are about to embark is not easy especially with all these people on youtube doing food reviews. Its great to see you are not reviewing shit beige junk food anymore like so many of the youtubers, I hope it works out for you as you seem very focused and determined, I am with you all the way, and thank you as most people should follow this and stop eating shite food that will effect their health in the future.

    I’m so happy for you to start this journey Darren.
    Doing what’s right for you is all that matters. Of course you will get all the “I know better” comments but, it’s not their deal it’s yours.
    I think I can say apart from this trip to Canada, my veggie pot is always in use. And of course don’t forget your gentle exercise when you feel well enough. Little steps my RUclips friend.

    Darren don't set yourself up to fail. Fats in things like butter, olive oil and coconut oil are good for you and will help stabilise your weight. People eho regularly drink tablespoons of olive oil are often much slimmer than those who dont. When you have a coffee put about 5 traspoons of coconut oil in it. You will nit put on weight. Dont make unsustainable restrictions on yourself. You must use salt for taste when you are cooking but use sea salt or Himalayan salt. Just cut out the processed stuff which is overloaded with this as well as harmful, fattening seed oils.Eat steak, liver and chicken. Eat meat fairly regularly but alternate. Dont use margarine or sunflower seed oils .Drink berry smoothies and add some parsley or arugula/ rocket to it. Sweeten with honey to taste. Sweeten with raw honey. Eat yogurt and have it with nixed nuts and raw hiney as a treat instead of sweets and cakes. Cook scrambled eggs in melted butter for your breakfast. If your body is not getting enough healthy fats you will quickly lapse into your old eating habits. You should never go on a diet, you just need to eat healthy.

      Spinach and different cheeses are essential , Darren. Parmesan, cheddar, Feta, halloumi. Munster and Camembert excellent for vitamin K2, putting calcium in your blood into your veins.
      An easy , healthy recipe for you Darren.
      Crumble some blue cheese in a bowl with a minced garlic clove. Add a chopped small red pepper and drizzle olive oil all over . Mix it all up . Meanwhile boil some spaghetti pasta in salted water. 2 minutes before pasta is ready toast a pan of crumbled walnuts and in another pan lightly cook ( don't know the technical term?) some washed spinach leaves. Combine it all together .
      *Also, make a lovely homemade salad dressing with raw honey, Dijon mustard, apple cider vinegar and olive oil. Don't forget wild salmon , sardines, anchovies, clams. Make it a lifestyle change.

    Protein is very important, also not all fat is bad. Avocado , olive oil, grass fed butter, Kerrygold I use. Nuts and seeds in moderation, it's the bad fats that are causing the problem. Hope your health improves as you seem very determined x

    DJ, you need to wash those vegetables before you cook them. It's true that boiling them will likely kill off most bacteria but your still adding dirt and grit to the boil. Vegetables are handled by all sorts of people before they're packaged and some of those people likely don't have the best hygiene practices. I put all of my vegetables through a salad spinner.
    As far as carrots go, where in the world did you get the idea that cooked carrots are worse than raw? They contain less starch when cooked not more. Also less sugar, lower sodium but nutritionally, they are pretty much the same.

    that water that you poured away was packed with nutrients, should have add an oxo cube to that, that would be a fantastic soup

      One cube contains 900 mg of sodium and the recommended daily maximum is 2300, less if someone has a heart condition or high blood pressure. You'd max out your sodium intake in 2 and a half cubes, not including the sodium from anything else you eat in a day.

    A little tip.. you can eat everything you want in moderation… I use an app that tracks how many calories I can have everyday, and I can basically eat what I want as long as I stay under my daily allotment of calories I’m allowed. This worked for me bc dieting is like torture to me. Whatever works for you, I just knew that was the way to go for myself personally. Best of luck on your journey!

    No salt! Don't think so, no sugar absolutely, no natural fat don't think so. Natural fats water and salt you will thrive on. But absolutely no sugar & carbohydrates..

    You know what your doing darren ,you will do well.
    Now salmon is good white meats as well ,i like easy to digest milk .gluten free noodels akeays good for soups .whole foods ,herbs and stock.now a lik dalt and pepper i fo nerd a a pinch of sugar in suces or soups to balance a bitter herb or tomato paste.
    That is nothing compared to deep fried foods or carbonated soda that bloats you .low carbs is good and not alot of red meat because it takes to long for the gut to process. Beans can also be hard to process in the gut .

    Watching you drain the water from the vegetables ,reminded me of as a young child watching my grandmother cooking in Tottenham in the early 50's (still in food rationing after the war).She would keep all the veg water to drink later during the day. Must admit ..at the time it was not for my taste.😝

    Just thinking, when you drain off the vegetables, all the vitamins are being wasted down the sink. Why not keep the veg water to maybe drink separately or steam your veg instead ? 🙂

    You could film your walk to the grocery store and include that. Also, possibly, going to different places in the UK to eat the food you've cooked. I've never been to the UK. IDK just throwing around a few ideas for you. 🙂

    A vegetable soup basically, simples. A stock cube and some herbs , garlic and sweet paprika would have.been nice, oh and celery.and why no carrots ?oh I jumped the gun, all that nutritional juice down the drain ! Would have been a lovely soup with added extras.

      People don’t understand they (and I don’t necessarily exclude myself from this) are addicted to things the food industry want them to be addicted to, like fructose. Added sugar is in an unbelievable amount of things in the supermarket and the health impacts are enormous. Whole foods are the way forward but as with all addictions, it takes a serious mindset to stick to it long term.

    Good luck but I have tried and failed with similar diets as there is nothing to look forward to. As previously stated: sugar no, carbs no. Natural fats all good along with plenty of water. Good luck anyway I look forward to watching your journey 👍

    As a diabetic I have to be careful with my diet.....plus having mobilty issues so lack of exercise...theses food vlogs are going to be helpful to many of us .

    Best of luck with your detour into the realm of healthier food, DJ. But please don't go shedding too much weight. When it comes to my food reviewers, I prefer a substantial portion. 😉 I used to enjoy the shows you did a while back with that other reviewer. You bounced some enjoyable comments off each other. Would you consider going with him, a mate, your significant other, or even different viewers of your channels, to eateries where you could enjoy healthy nosh while they had more standard fare? You could compare what was in the meals, the calory and other differences and the prices? Show us if it's possible to eat out healthily but enjoyably? And where you find such establishments? Just a thought.

      The heart clinic in France that looked after me followin a bypass, has a dietician. Simple advice...eat less. Eat healthily. Excercise. Not rocket science.

    I made a fantastic roasted tomato soup (loads of tomatoes cooked in oven with Ev olive oil, diced carrot, diced potato, died red pepper, whole garlic cloves, then once cooked blended with veg stock and light coconut milk, soy sauce and tiny bit of maple syrup. It was so delicious. I had it with granary croutons and fresh basil and a swirl of cream. I had it for a few days and then went for a blood test. Last blood test my blood was dark (low oxygen) and loads of white fat was separating from my blood in the test tube. It was really alarming. This time my blood was a fantastic healthy crimson colour and no fat separation.

    As an ex chef you should have a better idea of decent nutrition/exercise/ diet and the times you should be eating …. Boiled bland veg is not sustainable and totally boring setting yourself up for 💯fail …. 🙈

    Where is the protein? A strict vegetable diet isn't healthy either without a protein or substitute. I agree with one of the comments, I think having eaten the diet you did in New York during a really hot spell I'm sure factored into your current situation. Maybe one piece of pie instead of 2 and smaller portion sizes would help. Good luck to you DJ.

    I would have saved the stock to make a nutritious veggie soup. I hope this is just to kick start your weight loss journey because your body needs protein and I don't see the problem with chicken for instance. I am sure that you know what we need for healthy eating and it is surely not just boiled vegetables. Unsustainable for sure. I am Type 2 diabetic and eat lots of good things without carbs and sugar. I wish you well but please listen to your body if you start to feel weak and unwell. x

    If youre reheating your veggies in the microwave, you are basically blasting the goodness out of them, pointless eating veg if youre doing it that way

    There is growing support for a non-meat, raw-food diet which is claimed to reverse (not cure) diabetes 2. You don't lose any of the goodness you do in cooking. And think of the time you'd save on cooking, washing up greasy pots and plates, the power saved etc. How one's guts would cope, however, I'm not sure.

    Yeh don’t forget you can season the veg and eat plenty eggs and lean meats , dnt torture yourself , eat plenty fish salmon and mackerel. There is plenty of choice.

    Darren , try and have one 🥑 avocado per day , small handful of almond nuts

    I used to throw away the dark green parts of leeks but now I finely shred them and use those as well , try not to waste anything

      Yes, I don't buy leeks that have the dark leaves cut off. Great in soups, like kale.😀👍
