- Soft Tofu Soup with Eggs
(for the anchovy-kelp stock)
5 big, dried anchovies
1 piece of dried kelp
4 1/2 cups of water
4 cups of stock
1 tube of soft tofu (250g around 9 oz)
1 medium zucchini
3 small eggs
fresh green & red chilies to your liking
4 sprigs of green onions, chopped
fermented anchovy, one heaped tsp (more or less depending on your preference/ You can use salt, intead.)

I have never seen the removing of the intestines and the heads of the anchovies. I learned something new chef. Thank you.
If you toast the dry anchovies it will remove the fishy smell. Something new I learned too. Thank you chef.
I don't think I have seen dried anchovies here at the farmers market where they have all types of ingredients from all over the world. I will have to look for it.

This soup looks so healthy and nutritious too , reminds me of my mum's soup she makes it with soft tofu and crabs . This soup is so hearty with the egg and tofu i have to try this one out, excellent my friend :)

Anchovy Kelp Stock how glorious! I definitely love anchovies but I've never had kelp before I don't think is it like seaweed? What a delicious looking soup...hangover, Me? never😁👍! Wonderful cooking as always on Cook dat Food!

Gives that lovely umami, and is super healthy too. If you ever did find yourself with a hangover (heaven forbid), this soup would save the day 👌
