The ONLY Century Egg and Pork Porridge (皮蛋瘦肉粥) Recipe You Need

  • 【Ingredients】
    4 century eggs, peeeled & wedged
    150 g pork shoulder slices
    2 ginger slices, shredded
    200 g short grain rice
    (rinse, soaked, drained and coated with cooking oil)
    1600 ml water
    Sesame oil to taste
    [ Seasonings ]
    1 tbsp soy sauce
    1 tbsp oyster sauce
    1 tbsp rice wine
    1 pinch salt
    ½ tbsp ground white pepper
    1 tsp chicken bouillon
    1 tsp starch
    1½ tbsp cooking oil
    【Steps】
    1.Remove the shells from century eggs. Use a rinsed knife to wedge the century eggs. This will prevent the yolks from sticking to your blade.
    2.Shred 2 slices of ginger. For optional garnishing, chop some scallions.
    3.Add the ginger threads, pork slices and seasonings to a mixing bowl. Give them a few grabs, allowing them to soak in the flavor.
    4.Add some starch and an extra bit of oil to the marinated meat, grab a few more times to coat the meat well with starch. This will lock the flavors in the meat while adding a velvety texture to it. Allow the meat to sit aside.
    5.In a claypot, add 1 portion rice to 8 portions of water and bring to a boil. Once the water starts boiling, reduce the heat to low and simmer with lid covered for 40 minutes (open the lid occasionally to check the doneness and stir).
    6.When the porridge is cooked to your desired doneness, stir in the meat slices and century egg wedge. Continue to stir and simmer until the meat is cooked.
    7.Drizzle some sesame oil to add an extra touch of flavor, mix well before turning off the heat. Serve with chopped scallions, dough fritter and/or fried peanuts.
