    Chef whenever I cook large quantity of kachi biriyani after 20 minutes dum when I open it there water at the bottom. Why it happens ? Any reason.

      Did you used commercial cooking range for large quantities? If you get water ,after 20 minutes just keep for 10 minutes rest. All water will come around the biriyani Handi . Then turn on fire high flame and slowly move your handi like CLOCK till 5 minutes, i hope you will get great results.
