Hey, Mark! Great video! I've always wanted to visit Osaka. By the way, that soft boiled egg is called Onsen Tamago. The cooking process is really different, almost like a sous vide. The egg meets the boiling water with the heat off and then both come to the same temperature slowly, that's why the yolk is "molten" not runny. Marries perfectly to the udon. And that chilli powder is called shichimi, which contains seven spices, including roasted orange peal, that's why it's light and fragrant. A must have for udon eating. Have a nice trip and enjoy Japan! ;)
