    Amazing Red Pepper Hummus, Dip, and Dressing
    Here is the basic recipe for the red pepper hummus dressing:
    Juice of two medium lemons, Meyer or Eureka lemons both work
    One medium to large head of celery, cleaned and diced
    1-inch-thick slice of yellow onion or to taste
    1 cup loosely packed dehydrated red bell pepper pieces
    6 tablespoons of chia seeds
    1/3 cup of shelled walnuts
    Blend lemon juice, celery, and onion until homogenous. Add red dehydrated red pepper and blend again. Add chia seeds and walnuts. Blend again until smooth. Serves 6 to 12 or more depending on how you want to use it. If you want to use this dressing on a gigantic salad, you’ll get between 4-6 servings.
    For a lower fat version, you can add cooked chickpeas in place of the chia seeds and walnuts.

    Those two are just phenomenal and such just generally pleasant and nice people, very well rounded and reasonable :) have been loving their raw food summits these last few years, so I'm excited for this one ^^ and I can't wait for your appearance on their summit too, Chef AJ :D thank you for having them on

    It takes forever to eat a salad like that...and then there is chew fatigue. I've tried to do it but end up putting most of it in the fridge. However, they are wonderful and so informative. I'd love to know a lot more.

      This comment is so underrated! That's actually something holding me back regarding more leafy greens. I tolerate chewing my food far better than drinking (even slowly drinking) a Smoothie but there are limits what fits a normal work and social schedule.

    I've been vacillating with eating right for years. I KNOW this is the correct way to go, but I'm such a wishy washy eater! I just can't stay focused and be consistent! I really need help. There's so many people who are promoting plant based diets...

    Can you use roasted peppers (no oil added) instead of dehydrated? Wondering if that changes the taste

      I think that is what a calm energy looks like! They are models of good health, in my opinion.

      Who IS a poster child for energy...people don't usually bounce all around and do jumping jacks while being interviewed and showing power points. The man I knew who would've def been the poster child for energy ate paleo.. dropped dead on the treadmill while running....threw a clot...end of energy.
