I’ve had his “whole fried chicken” at his NYC restaurant, I think it’s called the red rooster in Harlem. Mid tier chicken, and the staff treated us horribly.

I’ve been to red roster and had the chicken. Looks good though you did miss one thing. The spice mixture isn’t put on dry. He mixes it with some aromatic oil and tosses the chicken in it. It’s really delicious
For anyone unfamiliar with Ethiopian cuisine and spices just getting your hands on some berbere will open up new culinary worlds, and if you're lucky enough to live within travel distance of an Ethiopian restaurant they've always been lovely and wonderful people when ever I have found one.
Personally never understood food rating channels. Trying to compare the sheer variety of foods that top chefs produce in any manner that isn't biased is a fool's errand. I love this move away from rating one dish over the other. Both dishes exist, why not enjoy them both?
For me the issue is that the chefs are aiming for different goals. A Rachel Ray 30 Minute Meal is a totally different thing than a Gordon Ramsay Michelin Star entree, so to rank them would be silly.
Damn this one looks absolutely amazing. I respect the choice not to do the ratings anymore, but it was a nice touch at the end just to recap what you've made so far. Not a huge deal, but keeping the graphics and removing the tier list would still get that across

Fun fact about Marcus, he's been a guest on the popular Swedish game show På Spåret (On the Rail), which is basically a geography based quiz show. He was paired with musician Timbuktu and they did very well on both seasons they were on and were a very popular pairing. So he isn't just a great chef, he's great at trivia too!
He’s really accomplished, but I first learned about him after he won Top Chef Masters. He was memorable because his plating was usually pretty bad, but his food was consistently the best tasting. That’s how I knew he was legit lol. Taste over looks!

I actually went to the red rooster in April on holiday, all the food there is crazy good and humbling cheap. They even had live music which was so tight! Awesome place to eat lunch / dinner
