America’s Test Kitchen
Egg Nog Recipe
4 cups Whole Milk
1/4 tsp salt
8 high quality eggs (6 full eggs, 2 egg yolks)
1/2 cup + 2 Tbsp white sugar
1/2 cup brandy, bourbon, or dark rum (optional)
1 Tbsp Vanilla Extract
1/2 tsp nutmeg
1/2 cup Heavy Whipping Cream (1/4 cup if not adding alcohol)
Bring milk to simmer over medium-high heat. Whisk eggs and sugar together until incorporated. Whisk simmering milk into egg mixture to temper. Return mix to saucepan. Cook on medium-low for 2-5 minutes, until temperature reaches 160-165 degrees. Take off heat, strain into serving bowl. Add alcohol (optional), vanilla extract, and nutmeg, mix to combine. Cover and chill at least three hours. When ready to serve, whisk heavy whipping cream to soft peaks. Add whipped cream to custard mixture and whisk to combine. Serve topped with freshly grated nutmeg.
THANK YOU! from me also.
You're the hero I needed
Shout out man! Im outside the store trying to make a list 😂
Thanks!!! I had made a recipe like this over 10 years ago and forgot who provided the recipe. I couldn't find it at all.
Awesome. Thank you
I'm going to start making eggnog an Easter tradition. Because I can.
A much better use for those eggs!
Easter eggnog. Love it.
I love that xoxo
YES!
Makes me feel better for making it a just any day Wednesday tradition. Because I like drunking alcihall .
When she said, "Girl I got you." I felt that.
"Have I ever steered you wro- no wait, don't answer that."
They have such good chemistry together.
@@roberttelarket4934 That ship sailed soooo long ago. I quite like the show without Christopher(never thought I'd say that) because it lets the other cooks shine through like Elle, Becky, Ashley, Keith, and a few others that I'm brain farting on😁
@@roberttelarket4934 you can pray really hard for Christopher to come back, but that ain't happening any time soon after the stunt he pulled. And his Milk Street is terrible.
@@roberttelarket4934 with all the recipe testing and all of their magazines and books, they likely have hundreds of more recipes in them. It's been a good twenty years for them. I think it's probably close to twenty five years. I remember Bridget and Julia being youngsters in the beginning 👀
@@roberttelarket4934 I believe Kimball had the money to pay staff because he was an entrepreneur with his finger in many pies plus PBS helped with that. The company that purchased the magazines, books, and tv show are huge, so they can afford to pay people!
@@roberttelarket4934 LOL! Unfortunately, I HATE eggnog! Happy Holidays and I hope you enjoy all the parties and eggnog.🎄🦌🎅
It's two days before Christmas and I went to four different markets. All were out of eggnog! I found this video and made some myself. I used 3 cups of milk and 1 cup of heavy cream, omitted the booze till later but otherwise followed this recipe. Perfectly delicious. My guests can add liquor to their taste.
What about scorching??? Wouldn't an old fashion double boiler be good to employ F or heating up the milk?
It’s never too early in the year for eggnog!
My one wish in life is to get to hang out with Bridget and Julia. They're absolutely fabulous and lovely.
We used this recipe and made your homemade eggnog this year after feeling the same way about eggnog Julia did. I am so glad we did. It’s so creamy and smooth. Thanks, Bridget!
I just made one with tiramisu flavors. I added some espresso grounds to the milk while simmering it, mixed in some mascarpone cheese in place of the whipped cream, and I found a cold-brew coffee liqeur to use as the alcohol. It's in the fridge now cooling down for tomorrow. I plan to serve it in a mug with a dusting of cocoa powder on top and a lady finger stuck into it like a cinnamon stick would be. I'll let you know how it turns out.
I always love seeing Julia and Bridget together!
I made the recipe they demoed in this video. It really came out good, make sure to follow their instructions.
Only 273 days till Christmas!
I just love these two ladies together, they always crack me up and make fantastic videos. I love eggnog, I'm going to try this great recipe. Thank you ladies!
*regionally here in the south the best egg nog is from Weigels...buy a lot of it while it's in season...and my weight reflects that as well...makes excellent french toast as well*
Brougiere’s eggnog is excellent! It’s found in Southern California. Why can’t eggnog be a year around thing?
I always enjoy watching the O.G’s
We love you two !!!...for lotsa years now !
I love Egg Nog! I'm a true believer in making everything homemade and I am one who has NEVER made this ever. I must do this .... i haven't had my Nog fix this year.... in teaching me this you have just made it no more a "Christmas time" drink!!!
Never been a big egg nog fan... I go more for the Southern Boiled Custard, with just a smidge of what Granny would call "Special Flavoring" (a bottle of Jack she would keep in her medicine cabinet because it was "medicinal.") Bahahahaha!
Great version for a cooked egg nog. I've always combined the eggs, milk and sugar together first then slowly heated it up -- tempering is not needed. It tastes no different compared to the tempered version and it's easier to do.
I agree with this.
Thanks, I've only had store bought since since the 70's. My parents used to make it with raw egg so I was always hesitant to try. I will follow your advice!
Tempering has nothing to do with flavor. It's done to avoid turning your egg mixture into scrambled eggs by adding the hot milk all at once. Might still not be absolutely necessary but it's the safer way to go. ;-)
@@timothystahl4096 Understood. But I never had scrambled egg pieces in my custards using the non-tempered method. :-)
@@22lyric We don't even have it in stores here. People just make their own
Just made this. Perfect recipe. Superb!
This is basically the same ingredients (minus the liquor) as making a flan which leads me to thinking, if you bake it in the oven at 40-50 mins, it will turn out to be a flan. Conversely, the precooked flan taste like an eggnog. Something to think about.
Hmmm ....now I want some flan
I made a half batch and it was delicious--especially with the whipped cream
Just in time for summer! 🙃
Haha
It's timed quite well for the southern hemisphere.

Lmao
😂😂😂😂😂😂
Ohhh this is awesome,I’ll be able to have nog now through the winter time after holidays😀😋
I like a thicker custard and twice the liquor (half c. brandy and half c. rum or bourbon works). But however you do it, it is SO much better than the melted ice cream in the store.
How do you go about making the custard thicker?
@@jbintx4009 I was afraid someone was going to ask me that. ;) IIRC, more yolk, half-and-half instead of just milk, and more cooking time. It's been so long since I made my annual syllabub that I forget the recipe now. One really needs someone to share it with.
@@iDuckman Adding/using those ingredients makes sense. Thanks so much!
Half a cup of brandy, half a cup of bourbon and half a cup of gold rum is about right for this recipe.
Nice! Thank you for this! I’m going to try making it with coconut milk instead, since dairy causes me to get inflammation.
I was wondering if it could work with a milk substitute. How did it turn out?
Thank you! I remember making a similar recipe once, years ago. I don't remember the additional egg yolks👍👍but I remember a little sprinkle of cinnamon in the whipped cream. Eggnog here I come!❤
Why would you expect liquid custard to be anything other than delicious?
Your punch bowl looks like a 1950’s Dorothy Thorpe one my mother had when I was growing up. I wonder what happened to it? Beautiful piece!
Tried this one and it was perfect. Highly recommend.
I prefer the one with egg whites whipped separately and folded in gives it an improved structure if keeping it in the fridge for a few days.
😀 That's how my grandfather made eggnog. Alas we misplaced his recipe.
My great grand mother made hers by separating the egg yokes from the whites. Beat the yokes, then beat the whites stiff with a fork on a frozen plate. Blended slowly together. It was amazing. I dont remember the recipe bc I was it was 64yrs ago. 🤣🙂
Just split your whites in the beginning. Machine beat until soft peaks, aff 1/3 cup of sugar. Continue to beat then add to the milk mix. Before chilling. Then whisk when u get out of the fridge again. Add in 1/4 - 1/3 cup of baileys. Serve and top with whipped cream@@danjv
I just made this and my husband went crazy! I added double nutmeg and used organic ingredients. How long will this last?
@instantpotprincess2415 Of course, organic means absolutely nothing regarding taste, texture, or healthfulness.
Covid got us all confused about the date.
Blame everything on COVID - that's the way.
Basically, it can also be for Easter with all the eggs.
A tip: you can watch movies at Flixzone. Me and my gf have been using them for watching a lot of movies lately.
@Jason Roberto Yup, I've been watching on flixzone for months myself :)
@Jason Roberto definitely, I have been using flixzone for since december myself =)
Love that Julia whipped the cream by hand!
I love both of you. I have watched you for years!
Oh boy! I made eggnog over the holidays and in was great. Rum and bourbon and eggs and cream, what could go wrong lul
Perhaps a heart attack?
@@darrenplaster it definitely had a lot of calories but nobody has a heart attack from excess calories for a short time. People generally get heart disease and have heart attacks as a consequence of being fat. The conclusion is don't be fat.
Glad You made erggnog. I love goo0d eggnog all year long but especially during the holidays.
Nice job 👏 I will try this recipe of Nog.😊
Interesting how subtle alterations and augmentations make such a big difference!
I Love Eggnog. I have watched several different cooked and uncooked recipe videos. I am curious to see if there is a difference in using whipped cream versus the whipped egg whites. I am going to try this version non alcoholic. Thanks for a new recipe.

So did you try it? And which one did you like better? I'm looking at all the recipes now and I'm curious to know. Hope you had a Merry Christmas and a Happy New Year!
@@sosad9381 Have not yet. Been working a lot so time is a bit short. I will keep you informed.
05:21 This is really good!
Julia: mmm..MMMmmm! Bridget: Mmmhm.
Julia: M'n..woww! Bridget: Hmmm..
I'm going to make it next week, which is Easter. It uses eggs, just perfect.
I’m trying to eat more eggs and milk for my pregnancy diet. This is perfect timing!! Thank you, ATK!!
Good for you. But leave the brandy out.
@@roderickcampbell2105 hahaha yes, I was planning on that 😂 thank you!
@@carissajager Oh, I knew that too Carissa. Save the brandy for later. You may need it!
@@roderickcampbell2105 lol most definitely!!!
Folic acid in the yolks is essential for early fetal development!
That nog does look *Egg-stra special!*
I love love eggnog and a local dairy makes a pumpkin eggnog every holiday season. It is like drinking melted pumpkin pie and it is extremely delicious!
@@roberttelarket4934 OMG it tastes like drinking liquid pumpkin pie and it's Hood dairy. They also do a cinnamon and the vanilla and a sugar cookie and regular gold and eggnog which is I think the best on the market. I hope this helps! Merry Christmas to you and yours. :-)
I absolutely love Eggnog and this recipe is one I will make. Thank you..👍
Thanks for the recipe! I'll give it a go and see how I do. Wish me luck!
I am EVER SO tempted to make this.
I really like the rapport with you two. I’m tempted to try this recipe come next Christmas 🎄
It’s time. Have you tried the “nog”?
A real simple Kid friendly Eggnog (from a kids cookbook from the 60’s) 1 egg, 2 tablespoons sugar, pinch of salt. Mix then add 1 cup milk, 1/4 teaspoon vanilla. Mix and season to taste with nutmeg. Makes one serving. I usually make a triple batch in a blender. You can also use egg substitute if you are afraid of drinking raw egg. Growing up in the 60’s I would drink this eggnog year round. Enjoy
Good timing!
thxs, you always come through . . .
Thanks ladies this recipe is easy to follow, can't wait to try it.
I've never tried an eggnog. Will def try this out for new year's eve
Best egg nog. Bless you both
I understand where people come from when they say they don't like store bought eggnog BUT if you can find a brand called Promised Land, try theirs.
I completely concur!!!
I think Promised Land ‘Holiday Nog’ tastes much better than the Egg Nog flavor. It’s not easy to find here though. You have to almost know when the one store that sells it stocks it because it goes quickly.
My daughter will thank you because I am going to make it for her. 💖💖👍👍💖💖
Thanks again ladies xxx
All I can say is (Yessss&thank you very much..)🌉🙋🤩🧡
Well I think I have found a good recipe on how to make eggnog. Thank you very much!!
Eggnog is a delicious drink!❤😊
I don't usually like booze in eggnog, but I added Fireball this time, and it proved to be an excellent pairing.
Actually this will come in handy because I love egg nog, I’ll drink it any season idc lol
I love eggnog soooo much. Never tried homemade eggnog before.
In the south Eastern US, is Publix's grocery. Their brand of Eggnog is the very Best!!!!
Hi, this looks better than the last recipe I found. I have all the stuff to make it. It is$6.99 a half gallon at the store
Thank you so much
i think i'll make this to bring for xmas eve at moms house, i'm sure it'll be a huge hit
Miss seeing y’all on our PBS🥺👍🏽🆗💯
Add 1-2 cups of whole milk to store eggnog and continue with the spices, booze, and whipped cream. Legit same.
Good job ladies ‼️
Looks delicious. I can’t wait to try it.
Hello Sharon
How are you doing today?
For the europeans:
960 ml. Whole Milk
1/4 tsp salt
8 high quality eggs (6 full eggs, 2 egg yolks)
120 g. + 2 Tbsp white sugar
120 ml. brandy, bourbon, or dark rum (optional)
1 Tbsp Vanilla Extract
1/2 tsp nutmeg
120 ml. Heavy Whipping Cream (1/4 cup if not adding alcohol)
I made mine warm with a dash of rum extract . . . wow!
Thanks for this. It looks really easy to do!
I just love turkey hill egg now I shake it up and put it over ice.
Not gonna lie: this is the best eggnog I've ever made. Really like the "custard" approach, in that it's cooked. That said... THEY POSTED THIS AT THE END OF MARCH? Eggnog is now an Easter beverage?
Don't get me wrong, I love eggnog. But I think I'll need an eggnog break between New Year's and Easter.
Watching this because I want it year round.... Hard to find after Christmas time. It's the best coffee creamer ever too
Good to see you girls.
My grandmother made her own eggnog and put in rum, whisky, and brandy. Didn't realize when I was 9 why my aunt teased me about getting drunk.
Loved the store bought one just wish they sold it in the UK
This is the best cooking show!
The best eggnog¡!! thank you, can't stop drinking it
Omg love love love nog homemade or store bought
I blended the eggs and milk and did it sous vide at 62C for an hour, which was the temp I found somewhere else. I'd love an official sous vide version, seems like a great candidate as it starts similar to a custard. I'm putting it on the Christmas list early so the ATK elves have time to experiment for next year 🤞🤞
How did it come out with the sous vide machine? I'm tempted to use mine for nog as well.
I have bought eggnog from grocery. I like it. If there is a recipe that does NOT use alcohol, then I would like it, but not what I have found so far. Maybe try this without the booze?
Looks yummy!!
Hello Cathy
How are you doing today?
I like the serving bowl!
Here in the Scottish highlands we don’t bother with eggnog….never had it in my 46 years. However, we do enjoy our booze and sweets!
I’m going to try this 2morrow. My son purchased some kind of eggnog, it was terrible I wanted to cry. I struggled trying to swallow it. But I might just use it in my coffee 😂
But i have go out 2morrow for the heavy whipping cream, liquor
The best eggnog Swiss farms & Cumberland dairy in New Jersey their brand is called fresh Life
Yummy thank you
Try Alton Brown's aged eggnog. Delish.
My mom made the best eggnog when we were kids: whole milk, eggs, sugar. That’s it. She used an old fashioned egg beater. No cooking either. We drank it once it was beaten. She made it year round. Back when times were simpler. Delicious and great memories. 🥚🥚
Thank you so much for sharing this with us!!
My mother-in-law used to make the absolute BEST eggnog, the BEST! Sadly she passed on without sharing her recipe 😞 RIH Grandma C 🙏🏾🥃🙏🏾
LOL.
Yummy--🙄🌹💕🕊-- can't wait to try this recipe-- thank you ladies --
Looks good! I love eggnog! I am non alcoholic, but I do not see where that small amount would spin me out of control into rampaging through the neighborhood.
Have an old family recipe that is absolutely incredible with bourbon white rum. People make requests for quart every year. This sound great but with stick with the old recipe which does allow the alcohol to do it’s thing on the raw eggs
Im so happy..i found u guy's thank you so much..just tonight there was a announcement .on the new's saying there's.gonna be a shortage.on eggnog.so im verry happy .to of found you.thank you
I love egg nog!!! When I make it, it turns out really bad. Yes, I now buy it at my friendly neighborhood grocery store. I will now try this recipe and see how it turns out. Thanks for sharing this video.
