Here is my theory as to why he is trying to kill the sherif, if you recall from the last episode, he kills 30 people, he does because he just simply wants to dance but the guy punches him, so he kills him, then that starts a chain reaction of people wanting to kill him so he kills all of them, after doing this he is then wanted (which you can see in the background wanted posters for him) he has a bounty on his head, the only way to get rid of the bounty is by killing the sherif so that is what he does.
