- Want a super white frosting? Try this marshmallow frosting recipe! How to make marshmallow frosting by Pink Cake Princess. Pipe it onto your cupcakes or even better ice cream cupcakes and you will have a beautiful & smooth swirl just like a soft serve ice cream! It actually doesn't contain any marshmallows in it & is a really sweet frosting.
Leftovers can be piped into mini meringue shapes & left to dry for a few days to harden up. It is a sweet frosting & can be coloured with liquid food dyes to make the most beautiful colourful pastel cupcake swirls! Check out the ice cream cupcake links to see how to do these things. How to Make Marshmallow Frosting - Recipe Ingredients
3 large egg whites (about 100g)
480g white sugar
3 teaspoons light corn syrup
1/4 teaspoon cream of tartar
150ml water
1/2 teaspoon vanilla extract
Place all ingredients except vanilla extract into a large bowl over a saucepan of simmering water. Make sure that the bottom of the bowl isn't touching the water from the pan.
Beat with a hand held electric mixer until soft peaks form (about 5 to 10 minutes).
Add & combined vanilla extract & remove from heat.
At this stage you can add in food colouring if you want.
To pipe I used a piping bag & a Star Tip No. 17 from Loyal (brand) but you can use any large open star tip like that.
If you don't have piping bags or tips you could use a large zip lock bag with one of the corners cut off & you can be able to pipe a rounded swirl.

im planning to do this for my brother's class on friday. It depends on what type of buttercream you like. This is a really sweet frosting - it tastes like meringue but in a soft fluffy version instead of a firm version. It's great with a cupcake base that isn't too sweet - like a light choc cupcake that isn't too sweet. If you love sweet frosting (like most kids) then you will love this. If you like a more creamy buttery frosting that isn't so sweet - I would go for Swiss Meringue Buttercream (there's a recipe on my channel). I prefer swiss meringue buttercream as I prefer more buttery taste than super sweet frosting but if you are use to the regular American buttercream which is really sweet you may like this recipe too ; )

Yes if you leave it for a few days it will eventually dry up into a dry meringue type of texture - it's a super sweet type of frosting. It also depends on the weather - really hot days it dries up faster. My ones stayed outside of 2 days before they started to really dry up on the outside. Transport wise its ok as it doesn't normally spoil during transport with my experience

how many hours does it take for the meringues to dry up? and did u dry them up in the oven or just air dried it?
The meringue takes a while to dry up in the open air - mine took about 2 days to dry up ; )

It will hold it's shape & firm up as it dries in hot weather. It's very airy & light so great on a cupcake & will firm up if left in the open.

+Cristina Valiente i would use a regular meringue either Swiss or Italian and torch, or put cupcakes in the oven to brown for a few minutes instead.

Can you put the leftover in the freezer? How long will it stay good to eat?
Lisa Vanroose This one can't be frozen as it starts to set as soon a air gets to it. You can however pipe the leftovers and let them set for a couple days into mini meringues.
