Great video. I've had a go at the ribbon roses and while a lot are rubbish, i have managed a few half decent ones which look fine initially but then they seem to have 'melted' into themselves.....is that because my icing isnt thick enough?
Hi Helen, i found that sometimes when you are using left over icing (not fresh royal icing) its harder for them to hold their shape. How long ago did you make the icing before using it to make the ribbon roses or any type of royal icing flowers? When icing sits it loses air and air is what helps keeps it “fluffy” and stiff. Icing that has been too wet and then thickened with icing sugar or older icing doesn’t have good air and no matter how stiff you try to make it it will melt or be so stiff you’ll go nuts when trying to push it through a nozzle. I always used fresh icing for RI flowers or I’ll throw it back in the mixer and give it a good flogging for 30 second or so till it lifts its game. Makes a huge difference 😊 Hope that helps 😉

Hi Jhamdis, my advice would be to add white gel colouring when you are making your batch of royal icing so your base icing will white rather than translucent. Because you said your icing turn yellowish, I'm wondering if you are talking about buttercream instead of royal icing? If you are talking about buttercream with a slightly yellow tint then I would add a tiny drop of purple gel colouring to neutralize the yellow tint. Hope that helps 😉💞

I also mentioned in the video it last a long time, months & months.... ...I use up mine regularly so I dunno for sure, but I read in another baker blog that they last indefinitely...just need to make sure they are completely dry before storing them in the container and store in a cool & dry place away from sunlight. They might fade in colour overtime tho 😉👍💞
HI KC, it doesn't hurt my hand as my piping bag remains easy to squeeze....i think its because my icing is already pretty thick consistency when they come out of the mixer however if your icing is already runny and you added a lot of extra powdered sugar to make it stiff then yes you might find it harder to squeeze 😊
Hey hun, i made the monogram cookie from a spare cookie I had just to show how to use/incorporate the royal icing flowers in a cookie, so didn't occur to me to record making the actual E cookie lol sorry, it's pretty simple as I used my projector to get the monogram into the cookie 😁

No.....Store them in a zip lock back with wax paper in it, squeeze out the air. You can use a 3 ring binder to store the bags them in. Or a storage container with rice on the bottom(to help with moisture), layered with parchment paper between the flowers.
Please don't store them on the fridge, it will melt when you take them out. Please store in airtight container in a cool dry place and away from sunlight.

I use my left over icing to make royal icing flowers. I add more confectioners surgir to make the left over icing thicker. No waste.

It’s pretty much pure sugar so its preservatives are high! Long as it’s airtight and dry they last a ridiculous time!

Does your hand hurt from squeezing the bag or is my stiff icing possibly too thick? I tried making rosettes with stiff icing and found it painful
It definitely hurts my hands when I use stiff consistency.

Naturally, the sugar that royal icing is made from, hardens
I just air-dry them, leave them to dry naturally for a few hours, it will set and harden as it dries 😉👍💖
