The Best Brussels Sprouts Recipe | Easy Healthy Side Dish

  • These are brussels sprouts for people who think they don't like brussels sprouts. This healthy and delicious recipe will turn anyone into a brussels sprouts believer.

    BEST BRUSSELS SPROUTS RECIPE
    1 lb. brussels sprouts
    1 tsp. salt
    2 tbsp. extra virgin olive oil
    1 tsp. hot pepper flakes (adjust to your tastes)
    5 cloves finely minced garlic
    1/4-1/2 tsp freshly grated nutmeg
    1/2 cup freshly grated parmesan cheese
    Trim the ends of the brussels sprouts and remove and discard any discolored outer leaves. If the sprouts are large (more than 1 inch in diameter), cut them in quarters lengthwise through the stem end. If smaller, cut them in half.
    Bring 2 quarts of water to a boil, add salt and the sprouts. Boil the sprouts uncovered until they are just crunchy-tender (about 5 minutes). Drain the sprouts well.
    Wipe and dry the pot and heat the olive oil over a medium heat. Add the red pepper flakes and garlic and sauce for 1 minute or until fragrant. Add the sprouts and nutmeg and sauce for another minute. Mix the Parmesan cheese and toss the sprouts until the cheese melts.

    Kudos to you for offering a recipe that does not require cooking sprouts until they’re burnt, ashen and leathery as most recipes require.

    Just made some Brussel sprouts. I added chopped bell peppers (red, green, yellow, & orange) red onions, lemon pepper, baked mushrooms, and honey. Mmmm delicious 😋

    Made this recipe over the weekend. Loved it!!! I did cut back on the red pepper flakes a bit though. LOL! One note to anyone who wants to make this. You really do have to use the block parmesan cheese like she shows in the video. I forgot to pick some up and tried the dried grated stuff, and it just clumped up on the bottom of the pan. Otherwise, we loved the recipe. Thank you for the video.

    I usually don't like long recipe videos because I'm always out of time? But I surprised myself when I just loved this one. I mean, yes, it's long... you see other Brussels sprouts videos being 5 minutes tops... but you're so cheerful and you have such a way with words that make me just want to listen to the whole thing. Part of what makes food good is the happiness that goes with it and I felt that. Not to mention you have people around you to support you while you were making the video? They add to the flavor of your dish. Anyway, I'm making this tonight and thanks for the video. 😃

      Marcy Navarro it is literally a tutorial video, Marcy! Some of the people watching wish to have things more explained,and that’s what she is prividing them. A few are students with little to no experience in the kitchen!
      If you want a quick recipe surely you can find a video that will fit your wants.
      No need to get rude it’s just a cooking video on vegetables!

    The flavor combination here is amazing. Never thought to add nutmeg but wow. I did not use the olive oil, just sprayed the pan and was careful with the garlic. I also didn’t use the fresh parm, just used about a 1/4 cup of the jar stuff. For me trying to lower the calories this was acceptable and I can’t see making Brussels sprouts any other way! I’ve tried so many ways too and this has been my favorite.

    I look forward to trying this because I would like to overcome my dislike for Brussel sprouts. I have not heard of nutmeg with greens before. I know that Bobby Flay has a recipe for smidge of it in alfredo sauce, and that really makes the best alfredo sauce.

    love this recipe. Sometimes I crisp up some bacon in a large skillet, and use the rendered fat to cook the garlic, peppers and sprouts. Crumble the bacon into the final product.

    You mentioned the book as being by Andrew Weil, but worth noting that the woman in the book is Rosie Daley. She would be the brains behind the recipes and first came to be "celebrity chef" status in 1994 when she was Oprah's private chef and came out with a book on dishes she made for her during Oprahs food journey to get more healthy options. ..... thanks for the flashback!

      I would skip the parmesan cheese.... there's nothing "healthy" about any kind of cheese. It's carcinogenic as is all dairy.

    Nice video! After making the sprouts like you do and eating what we want, the leftovers are put in a mixer and made into a smoothie. Then pour them into a icecube model and freeze them. Use them in smoothies or preheat them as a gravy. Use a oven, heating them, a microwave will tear the structure to yakkie!

      Nateli Rodriguez steamed veggies are super easy! cauliflower (dipped in hummus), green beans, and cabbage are some of my favorites to eat as is! no salt or seasonings, but they're still delicious :)

    OMG these are so delicious, even my 10 yr old son said they are bomb! I put some chives and a little total seasoning from Lawry’s but other than that I stuck to the recipe... awesome goodness!😋 Also I’m vegan so I didn’t use any cheese but it truly wasn’t needed!

    Made them baked and didn't like the fact that the bottom part ends up sort of burned so I usually make them more or less this way except that instead of boiling them I steam them and you're right, they end up grey instead of green.
    I still love them though, better than baked. I add some chopped up onions and peppers of all colors and lots of garlic and celery and finish them up with olive oil and lemon juice.
    These look beautiful and tempting. I'm making them as soon as I can find them.

    I was wondering if steaming the sprouts instead of parboiling would work just as well? This method would keep the enzymes active and nutrients intact, I believe. What do you think?

      Yup she has steaming & roasting brussel sprout recipes already. People who think they don't like brussel sprouts probably have an aversion to the bitterness. But in this recipe boiling the sprouts takes away the bitterness and makes them mild enough for them to eat.

    Well, Dani, this one was quite tasty. I made a half batch, to see if I like them and demolished half of them, in a sitting. I experimented with a needle-thin drizzle of cardamom honey ... DING! DING! DING! I imagine balsamic glaze would taste nice.

    This is so awesome, I must try it!! I usually do roasted Brussels sprouts it the oven with olive oil, salt & pepper- under broil for 10 mins or so. So yummy! I love the crispy outer leaves.
    So... I was making cabbage and noodles last night, with polish kielbasa. (Ive been on a comfort food kick lately, I blame it on the cold weather or the holidays nearing ;) )But that dish especially... and also chicken and dumplings reminds me of my grandmothers cooking when I was a little girl! We always had kielbasa at Christmas 🎄
    Anyway, I thought of you last night, Dani! I said to myself "I bet she would know exactly how to lighten up some of these classic comfort foods, while still keeping them delicious!" So it's funny you mention it because I was having the same thought last night even though I missed the show. Awesome ideas!!! 😃

    You need to turn your cold water on when you put hot water down the sink! It'll save your pipes!

      Completely disagree with that! Not sure if you're repeating something that's a myth or your old plumber told you that. I put HOT WATER down my sink every day...fill up a large pot and dump it. It UNCLOGS anything that may be stuck or collected in the pipes. BTW, NEVER put coffee grounds down your sink even if you have a food disposal. They accumulate further down the pipe and will stop it up one day. Your comment about turning on cold water when you pour hot water is, no offense, absurd. THAT would be more damaging to your pipes.

      Babs yep! Plus hot water runs in the sink often when people do their dishes and it’s the opposite of not using the pipes on a regular basis (especially when it’s freezing temperatures outside), and what people flush down that makes them clog up/get ruined.
      But one rule to stick with is to NEVER use hot water from the tap, always use cold and then heat it! Or metals from the pipes will get in the body which is not healthy.

    Do you use nutritional yeast much? I love it on salad, green beans. Veggies and homemade mac and cheese. I mix it with panko for more of a crunch.

    Those brussel sprouts look delicious. How about using pink himalayan salt or grey celtic sea salt which contain over 80 different trace minerals that the body needs. There are numerous health benefits of these mineral rich salts and if you buy it in bulk, it's not that expensive.

    Tasted good! I unfortunately cooked the peppers and oil mixture on too high of a heat. I am using an electric stove. How high of a heat would you say be the best? Med/Low or low?

    How about soups, there are millions of them. (Clean up some of the classics) Plus its a good time of year since it's winter.... ????

    For David who said the video was too long, maybe it wasn’t short but i learned so much. Fresh nutmeg, what deliciousness! And though I’ve been cooking for years I’ve ever bought fresh parmesan and grated it myself. Loved the education.

    This recipe looks interesting. I might just try Brussels sprouts ;)
    Dani I'd love some easy healthy dishes for the days following Christmas (if it's not too late) I think our bodies will appreciate the break from all the richness we indulge in leading up to Christmas - before the 31st rolls around.
