    1 lb Fresh Jalapeños
    2/3 cup Apple Cider Vinegar
    1 cup fresh Chunk or canned pineapple
    The juice from the fresh pineapple
    2 cups sugar
    2 TBSP mustard seed

    The full recipe of brine should be followed for proper acidification of the recipe. This because the peppers will render liquid, therefore diluting the brine. Making half a recipe of brine means the brine is much less acidified. Just use the extra canned brine for marinating meats, salad dressing, cook some rice, etc. Recipe looks delish.

    This sounds yummy! I love using pineapple juice in canning. Zucchini in pineapple juice is a fave and I've been contemplating diced apples in pineapple juice as well. I'm thinking that would probably be delicious.

    This is a great version of Cowboy Candy. I can also picture using peaches in place of the pineapple for another flavour of Cowboy Candy. Thanks for sharing ❤

    I will be using this as one part of the gift baskets I make for my family and neighbors for Christmas. The original cowboy candy was a big hit, but adding fruit will take it to the next level. Thanks so much for sharing!

    I started making this recipe last year. My family loves it! My 3 sons are the main consumers. I send some to my son in Tampa with every package. They put it on just about everything! Love the pineapple addition!

    Love candied jalapenos, try it in a relish cut, love them that way. You should try using a wooden chop stick or handle of wooden spoon to debubble. That butter knife can scratch or chip your jars. Great video, thanks for sharing.

    When I simmered my peppers they changed color to a dark green, yours were still bright green.

    I was just showing a part of this to my wife, as I was explaining the Jalapenos seedlings I have growing and I noticed that my comment is not showing up???
    Anyway, I think the comment would have been about how I would like to try this if I grow enough, as this is part of the reason I'm showing my wife.

    I like it with cream cheese and crackers or cream cheese and celery. Pineapple is new to me with the candy jalapenos but it sounds delicious I will have to give that a try.

    I wish I was Mennonite so I could wear those dresses. They just look so easy to put on and off and it's difficult to get me dressed as I can't do it by myself. :-)

    Last month was my first try at candied jalepenos, and I loved it! I took out most of the seeds and membrane because I only wanted a little heat. But I am FOR SURE trying your recipe next time, because I LOVE pineapple and I just know this recipe is going to be fantastic!

    I was wondering if this might be good with the jalapeños and pineapple chopped like a relish. I love cowboy candy and sell a ton at my farmers market. This sounds delish. What do you think of chopping instead of slicing; will it make it too mushy? Thanks for your advice

      I have only seen the recipe directions to say to cut into rings. So I wonder if it’s a density issue or not. But I can ask a master food preservationist for you to get a clear understanding.

    This looks like it would be a wonderful twist on cowboy candy I like the flavor it is a little too hot for me. I have not ever used the brine to marinate pork roast but I have used it for a dipping sauce on kind of plain chicken or grilled chicken and it is wonderful. You take care and bless you

    I’ll try adding a fresh pineapple. I don’t remove any seeds but do use a food processor to make little pieces not slices.

    I thought that crushed pineapple sounded really good, if it were mixed in with the jalapenos. Not necessarily cooked with it, but mixed with it in the jar.

    Hi there!! This looks delicious!! Thanks for sharing. I'm new to canning so I've been watching and reading a lot. I read that we should use plastic debubbler or wooden chopstick because the metal knife can over time damage the canning jars. I would love to see what you put your cowboy candy on.       I hear that too about using knifes but my mom has canned for over 50 years and never had an issue. That’s how she taught me to debubble the green beans when I was little. I think it might be because the newer jars are thinner… I have a lot of older jars from the elderly neighbors who gave up canning. I’m trying to get away from plastic… thanks for watching!       @@suzyvance7328 I’m not a huge fan of spicy peppers so I can’t give a true a opinion. My husband would pour it on to Ritz crackers and eat that way if I didn’t have supper ready and he was dying. His employee said it was good!

    I made Cowboy candy for the first time ever this summer. It tasted great at first. I tried a bite from the fridge jar this week and they were no longer the same texture. They were sort of mushy. I don’t know what caused that. I will try again this summer. I also plan to grow more jalapeños then I did last year.

      Canning will change the texture unfortunately but the taste will be there!

    How interesting. I had never heard of Cowboy candy till you mentioned it in one of your other videos. Do you basically use it like a salsa? Might have to try . Do you think you could use already pickled jalapeños?

      I just use it like pickled jalapeños. It’s great for deviled eggs, salad dressings, meat marinade and pickled eggs.
