As I watch these videos my mind goes back to the 2 weeks that my mom took me back to her home country of Japan it was such a wonderful time and we were able to eat some of this delicious meat as I write this my mouth is actually watering.
I watch many of these videos and this grill is the cleanest and this chef is the most determined and to present the dinner in the respectful way I’ve seen.

I noted the discoloration too Woodruff. "Aged" would be a kind description. This beef (at 1.00 min) has been hanging around for a while, the discoloration on the fillet styled cut being most obvious. This is high fat content beef and not at all like the lean meat served as steaks in traditional western restaurants, where as you say, dry aging can change the flavour and peripheral colour of the meat. No... aging fat would simply make it rancid would it not? I am happy to be corrected on this matter by one more knowledgeable.
Martin Fischer just know wagyu beef is beyond expensive but its an experience worth paying for imo. It will not taste like normal steak whatsoever but it will be damn good
savino m. Im pretty the pink stuff is ground beef fat. Probably from the trimmings from the steaks. The yellow stuff I’m not really sure. I think it could be garlic since garlic and onion are usually what are found in these styles of fried rice.

What i love about japanese food is that everything look simple..not really complex with a lot of spices and what so ever but the taste is really good
Yeah. The ingredients are of premium quality already so I guess adding spices is just really a small bonus. And not to mention it's healthy too.

Calco my thought is just not fresh. Simple. Waygu beef normally doesn’t need aging process as meat is tender and soft enough.
