    nice simple recipe. I like a spiced fruitcake so added a teaspoon of mixed spice, one of cinnamon and the ground up seeds of a couple of cardomon pods. I also used a Yorkshore teabag in the hot water. Delish! 😋

    Watched this last night and made it this morning. Mine took longer to cook through, and being vegan I changed the eggs to chia seeds, and added some chopped nuts. Had a slice lunchtime. It was so lovely. Can’t see it lasting us too long. So easy and quick to do. Thank you for sharing.

      Hey my granddaughter is allergic to egg.. does this mean no egg off chia is added? And how ?

      @ I don’t eat any dairy or animal bi- products as I’m vegan. The chia seeds you add water, 1 tbsp of seeds to 3 of water ( sometimes I add a little more), this replaces 1 egg. Chia seeds are available in all supermarkets, sometimes with pulses, or in the baking isle. Loads of other recipes for her, just search vegan

    Hi Lauren great simple recipe,thank you so much for sharing.I will use butter instead of Margarine though. I live in Spain and my local bar owner is Scottish,and i can't understand him ,I'm always saying pardon what did you say.But i can understand you perfectly.Enjoy your day Lauren😘

    Going to make it this afternoon. Im sure I had a similar recipe but used mik instead of water. I have lost the recipe. ( i could be totally wrong though). Lookin forward to a wee slice with a cuppa..... is it a 1lb loaf tin?

    Lauren the ingredients say 235ml of water but I'm not sure if you said 135ml of water in the commentary can you advise please

    This looks lovely and by the comments very delicious. But i am worried over the oven temp for a fan force oven should it be much lower 160-170? Regardless I'm looking forward to making it. Thank you for the recipe

    Hi, I followed you exactly, but top of my cake is quite hard even though the rest is lovely. I covered with foil for last 20 minutes, any ideas?

      All ovens are different so you may just need to experiment a bit with temperature / duration - cover for longer or even drop the temperature slightly and dip the cake with wooden skewer to rest to ensure cooked through etc.

    Looks heavy texture. Prefer creamed butter/sugar method which allows more air into the mix.

    Is it 125 you mls or 225 mls please because have a strong accent. I t sounds like your saying 135 mls.

      Yes, I can see the list but because of your broad accent it sounds like you’re saying 125or 135 mls of water. Anyway, I compromised because it’s a similar recipe to my own and I used 200 mls. I am baking it at 180 for 30 minutes and then 125 for 45 minutes and it’ll be covered in foil on the lower heat. But many thanks for your recipe, I’ve never mixed cake in a saucepan before 😂 but it is much easier. 👍

    Just made your cake. I baked it at 170 degrees in my fan forced oven. Came out perfect. I also added spice that @ RaraR-tg3hy did. It taste so delish. Thankyou again for such a great recipe.
