With regards to why trust Paul and not Joseph Smith (and even Muhammad) is because Paul and the other first followers of Christ didn’t gain anything from preaching Christ’s teachings, in fact they actively suffered for it, whereas Smith and Muhammad gained fame, money, sex, everything.
The con artist Joseph Smith was in jail with his brother Hyrum, being held in custody for inciting a riot. A mob stormed the jail and both of them were shot. I wouldn't say he gained everything, he was only 38.
