Guys no one dips dosa in a rasam ,rasam is usually used on top of rice like sambhar ,mix rasam also ghee(if you find it spicy) with rice and eat with a veg poriyal or kootu it will be divine Also try white Pongal with coconut chutney it will be divine ❤️

Hasya rasa......comedy Sangeet rasa...music Soundrya rasa..beauty And..so on.... So Keith is absolutely right.. Behind every Indian dishes.. centuries old science, tradition.. Behind Spices..their mix,,,vary..as per seasons..as per climate,,, Any dish will taste..diffrently .in different seasons.. For example..a simple thing called "Tea"...become different..in summer...compare to winter..and to rainy season.. Ginger...comes in winter..clove come, Sone time cardimum also come,,, Indian cuisine saga continues,,,,,
Keith you were right about Rasa=taste in Sanskrit and many other Indian languages. You know a lot about Indianess (I know that's not even a word but still)
Rasam means essence in Tamil, and it's a lighter & more peppery version of sambar. It's meant to be taken with rice & a dry subzi or those deep fried appalams/papadams... when you drink it at the start of a meal, it becomes an appetizer, but when you drink it at the end, it's a digestive. Its good for cold/ cough/ body aches/ fevers. You should've started with hot rasam! It has pepper, jeera, green chillies, tomatoes, ginger, garlic (optional), fresh coriander & curry leaves & tempering in ghee. It also has THIN watered down toor dal, unlike sambar which has thicker consistency. At 23.10 the crispy thing is a masala vadai/paruppu vadai aka aamai vadai in Tamil. We make it for festivals & weddings & other special occasions, while the urad dal vadai is made during pujas & certain other occasions. Aamai means tortoise in Tamil, is called that because of the shape. It's made with equal parts toor dal, moong dal & channa dal, with a little urad dal (1/4th of the other dals) soaked for 30 minutes & ground to a coarse paste. Of course with added chillies, ginger, curry & coriander leaves & hing. Optionally you can add finely chopped onions, (sambar onions are better), garlic & greens like drumstick leaves. Yumm!
Have to admit that chef Keith is very knowledgeable about indian food and spicies. Also, he spells all the names of the vegetables and spices in such Indian way which is unbelievable for e.g Rassam, Rassa, Mutter, Mirchi etc. Hattsoff Chef 🙏
Y’all need to dip your tiffins (idli, dosas etc) in non-veg curries. It’s not traditional but the umami from the meats elevates the tiffin experience to the next level. Generally at homes some folks will ask for leftover curries from previous night’s dinner and dip their idlis and dosas in them for breakfast the next morning.
