If you haven't looked at it already take a peek at the item piles module. It is mostly used for as the name implies dropping items onto the canvas as a pile however they have a robust function to set npc or player's as "merchants"
This includes auto populating items using tables, having the shop refresh what it sells on the day to day, being able to drag items and set prices without having to enter things into the journal, and modifying prices modifiers on the individual level if someone makes a merchant mad or gets their favor.
It also removes the gold automatically and you can set items as services such as food, drink, healing, etc.

I'd actually forgotten about this module. It's pretty good, although I'd imagine for some it'll come across as overwhelming as it's not initially intuitive.
However, saying that, looks like it works well.

I just started getting in to Item Piles and did not know of the functionality to have the merchant style interaction. More reading & experimenting to do! Thanks for the tip :)

Oh. I've peeked at Item Piles and noted it as something to look at at some point, but wasn't aware of using it as a "merchant". Definitely going to look at this one, and soon!

I'll see if I can make all the required mistakes for you over the next couple of days ;)

Sir, I don't know if this is of interest for you, but there is a Module called 'Loot Sheets NPC 5e', it is basically a Merchant and Loot module that lets you turn the NPC sheet into a merchant. Once players have permission and 'Observer' they merely have to press the $ symbol to purchase items, no dragging and dropping. You can also have a roll table attached to it if you wished so instead of you deciding what they have there is an element of randomness to it.
Might be worth looking into, personally think it's amazing. Oh, I should say though, the transactions only go one way, thought it worth noting.
Edit: Okay, so I hadn't used this in a while, and although it seems the majority of its functionality works, a big kick in the nethers is that you can't delete items from it. So... kinda makes it not worth it at the moment. Lets hope Monk's sorts itself out.

Love the suggestion, and your little edit there is helpful. Maybe we'll take a loot at it anyway, as it could be useful for some people, even in it's current state. And hopefully that issue will be resolved soon too.

Good easy work around. Yeah, Ironmonk will definitely get that updated.
