Your knife work is silky smooth. You are making it look a lot easier than it is. You ever try to skim coat with a bucket + a roller? And what type of mud are you using for the level 5 skim coat?
When I do entire houses or remove textured ceilings I roll the mud on. I level 5 with USG green lid first coat and ProForm red or blue lid for final coat.
