- Chinese Fried Rice is a simple and yet difficult to master dish but once you get the hang of it, you can fry this super yummy easy meal anytime.
This is our Din Tai Fung inspired Shrimp Fried Rice. In case you haven't heard about Din Tai Fung, it is a chain of restaurants originating in Taiwan. Back in 1993, New York Times ranked them as the Top 10 Best Restaurants in the World. In 2010, the restaurant's first branch in Hong Kong at Tsim Sha Tsui was awarded one Michellin star and their second branch at Causeway Bay was also recommended by Michellin Guide. Although Din Tai Fung is known to specialise in xiao long bao (Chinese steamed dumplings), their egg fried rice with pork chop is also really popular amongst diners. Of course that includes us :). We actually stood outside DTF kitchen to figure out what ingredients were used. Opps - I hope we won’t be banned from Din Tai Fung because that’d be tragic. Whenever we dine at Din Tai Fung, fried rice is one of our must-order dishes but instead of ordering shrimp fried rice, we always go for their pork chop fried rice. OMG so good! I'll get Roland to show you how to prepare their pork chop next time.
Many different cuisines such as Indonesian, Malay, Japanese, Thai etc today all have their own version of fried rice but did you know that fried rice was actually first developed during the Sui Dynasty in China? This means that all variety of fried rice available in the market today can actually trace their origins back to Chinese Fried Rice.
Sorry I digressed...Back to this recipe - if you don't like prawns, please feel free to omit it.

This is my go to recipe everytime I want fried rice! Its really good, taste like the one I have at chinese restaurants. This recipe is variable, sometimes I change the shrimp to beef or pork, then sometimes I add garlic, and it always tasted good.

Good morning, friends! Some of you have requested for this Fried rice recipe quite a while ago but Roland only mastered it recently that’s why this took some time. He finally could cook a plate of yummy fried rice that tasted almost like Din Tai Fung. Of course Din Tai Fung is still the best but this is a good alternative. Now I can also cook this myself whenever I feel like having fried rice. Yum! Hope you will enjoy this recipe as much as we did. Let us know how this turned out for you yeah. On behalf of Spice N’ Pans ~ Jamie
Better if he added fish sauce instead of soy sauce. I've cooked this dish countless times and my daughter thought I had tapao from DTF

Just made it; super easy, super fast, and super good. The only change I made was to add some frozen peas and corn that I had defrosted under the tap. I recommend this highly.
Good day. You have simplified something that has seemed so complicated to duplicate. Thank you for the recipe and technique. I’m excited to check out more recipes from your channel. New Sub.
Hi Bill. Thanks so much for subbing! Glad to have you with us on our channel :-)
You are right. Cooking should never be a tedious task. Recently, I wanted to bake my own loaf of bread, so I checked out some RUclips videos. Every one of them had a recipe that took 3-4 hours - from prep to final product. I decided to hit the nearest store and got a loaf within 15 minutes.
Nice 👌👌
Very clear presentation and easy to follow! Not expensive dishes and yet very delicious. Tnx much...
You’re most welcome 🤓🤓
Today I cook garlic fried rice followed your recipe! Awesome ...bit of work though cause u need to fry garlic separately. Many thanks for ur videos
Tried this recipe a couple weeks ago! Excellent - Came back to refresh my memory on the technique. Love it from Trinidad & Tobago, in the Caribbean!

I'm from Ghana west Africa, I must commend you that your fried rice recipe is the best so far, even the egg and rice alone, oohhh mine, tastes great and my children and I love it. We are stuck to your recipe when it comes to fried rice. ❤️😋😘😘😘
Awww thank you so much for trying our recipe. We’re so happy to know that you enjoyed it. Yippee!!
Looks delicious... going to try some tomorrow... need a new recipe while we are hunkered down during this pandemic... thanks...
Happy cooking!! Stay safe.
Delicious 🤤 interesting to see the way your treat your shrimps! Sugar, baking soda and water! What kinda brand of soy sauce do you use?? Thanks for sharing this!👍🏻💕
Thank you!! This is one of my favorite dish to make now. I'm a beginner cook but I made it easily. Not only is the dish easy to make, its also really yummy. 😋👍
Thank you, sir!
I have tried for years to make perfect fried rice & never attained my goal.
Now I see what I have done wrong.
I appreciate you sharing your great knowledge, skill, & experience.
God bless you. 💗
I've learnt how to cook 7 dishes from you since the lockdown. There are a ton of cooking channels on RUclips and yours definitely ranks up there with the best. You have the ability to break down every recipe in such a simple reassuring way that it inspires beginners like me. Please keep up the amazing work! You've made my partner very happy - thank you! 😊
Thank you so much for your encouragement, Simon. I really appreciate it.
I've been making fried rice for decades and for some reason, I still like clicking videos where people cook fried rice LOL! I think I just like to see all the small variations in how everyone does it. It's one of those dishes that really get personalized after a person has made it a lot of times, so everyone's fried rice is slightly different ^~^
Just made this. Never knew DTF fried rice could be so simple. I can’t eat prawns so I substituted it with whatever leftover meats that I had in the fridge, mostly chicken. Added some chopped onion as I did not hv any spring onions. It turned out so delicious. I also added garden peas for colour. So yummy ! Thx again Roland.
I Cooked my rice in “Kee's Seasoning Mix for Hainanese” and it turned out sooooooo good. I didn’t need the chicken powder when frying. You should try it ♥️
This turned out soooooo good! I didn’t have spring onion or shrimp, so made it a simple egg fried rice but it still turned out amazing. Eating right now! Thank you sooooo much!
din know soaking prawn in water with baking soda will make prawn crunchy, thanks for sharing the tip!
You’re most welcome 🤓🤓🤓
ok, noted.. thanks..
No
It's the sugar.
I’ve always made a pretty decent fried rice just by how I thought it should be made. But I tried this technique/recipe and it has hands down been my go to for fried rice now. Loveeee!
I love this recipe. I like how you mixed the eggs not all the way cooked to the rice. It keeps all the rice separated from each other. I used same day white rice and it was super delicious. Had left overs and when I reheated it it want stuck with each other at all.
Awesome!! Thank you so much for using our recipe 🙏🙏
Simple is the best ❤❤❤ I will try your way how to cook this Shrimp Fried Rice, thank you.
I tried this recipe for my employer's dinner..i added some bakwa intead of prawn coz they don't eat prawn..was very nice!! and i got 👍👍from them😊thankyousomuch chef.happy new year!

The secret ingredient is actually dried shrimp water. Bring 1/2 cup of water to boil, drop in about 10 dried shrimp, boil for 2 minutes, turn off and cool overnight. Instead of adding soy sauce to your fried rice, add the dried shrimp water. Your shrimp fried rice will be on the next level.
yum! Thanks for sharing your secret!
Hieu Luu
thank you!!
@MsLuminous1111 some people are allergic to eggs, some to soy sauce, some to msg, some to shellfish. As a former Executive Chef and Operating Partner from Chang's to Fats, and fine dining, I always tell people, if you ever eaten at an Asian restaurant, all the dishes contained some kind of allergy items, from oyster sauce to chicken powder. But you are right, warn people that there are shrimp water in the shrimp fried rice.
Hieu Luu
Thank you. Please share more recipe secrets chef!
@dao ist shrimp stock is great. But I preferred dry shrimp due to the process it was made, it will give you a more salty flavorful taste, especially when used in lieu of soy sauce.
Thank u chef! For sharing this recipe and the techniques..simple but yet looks good..👍
Thank you so much Nabilah. Let us know how this turned out for you k. Happy cooking 👍🏻👍🏻👍🏻
Yeah chef! I will..😉
Oh ok noted! Thank you..👍

Awesome video and really helpful tips! 💯
Apart from prawns, baking soda can be used to tenderize meats (chicken/pork/frog leg etc) as well.
Absolutely. Thanks so much for watching our video!
For a chef, you are one, as well as a teacher, a father, a brother ,a mother, a sister, I do not have any words, be Blessed and be happy wherever you are.
Thank you so much chef!! You’re recipies are sincere and authentic - covers not only the ingredients but also the level of heat needed and most important the WHYs. I just made my best-first-ever Salt&Pepper prok ribs. Keep it up! Highly recommended!
OMG, only have watched two videos so far, and the food ive been able to make off of your videos is simply Awesome. Thank you for taking the time and showing how to make food on this level. Have the next 3 days off, I plan on making so much more food
Thank you so so much for your support bro!
I was looking for the most simplified version of Shrimp Fired Rice, and you made sure exactly what I had in mind. I thank you so much. You are awesome.👍
Thank you so much, Robbie, for considering to use our recipe. Hope you'll enjoy it. Happy cooking! :)))
I will definitely try this out. I have frozen shrimp in my freezer, and I was wondering what I was going to prepare other than shrimp on a skewer. As Lent is approaching, I hope to get in enough practice to make this recipe by then.
I noticed one of the comments mentioned that fire allows the wok to be extremely hot which leads to tastier dishes. Recently, I came across a product, NuWave Induction Wok, that is supposed to be as close to using a fire-wok cooking technique as possible. I'll have to save up for that, but in the meantime, I'll use what I have to get the cooking done.
Hi Pia. Thanks so much for your interest to try our recipe 🙏🙏 hope you’ll enjoy it. The Nuwave induction cooker sounds interesting but I’m not sure if induction cooking can help achieve what a Chinese restaurant can. We’ll be sure to check it out. 👍🏻👍🏻👍🏻
Super delicious!! Haven't tried this at Din Tai but don't need to, this is that good 😊 Had never come across the technique of soaking/marinating prawns in sugar/soda, & felt that is key in bringing that traditional restaurant fried rice shrimp's taste & texture. I cooked a big pot so my son relished it for a few meals :) Thank you so so much!
Love the tips and talking in the video. Picked up the things you said, such as letting the rice absorb the egg before moving on, don't chop the rice, or that the fried rice is done when the grains start jumping.
Also appreciate that you showed the frying process instead of fast-forwarding, so I could see it takes a while. This is a great video for beginner cooks to follow.
My 1st attempt is great, love the fried rice. I now have a new dish to cook for gatherings and party.
I used vegetables instead of prawn as my family is cutting down on meat.
//Veggie fried rice alternative//
Instead of prawns, I used 1/3 carrot, a handful of french bean (approx. 6-7 pcs), 1 fresh shiitake mushroom (approx. fist size). Chopped all these veggie finely. Heat up the pan, add 1-2 tsp of oil. While waiting for pan to heat up, sprinkle some salt, mix well. Stir fry veg till cooked and set aside. I added it to the fried rice at the stage where the video added the prawn :)
May I request for Melaka's popular cheese prawn beehoon and carnation crab style recipes if possible? Thank you
Good morning Yvonne. Thank you so much for leaving us such kind comments 🙏🙏 you’re very creative - good improv to the fried rice recipe using veggie. 👍🏻👍🏻 I think this may be the Carnation crabs you want - ruclips.net/video/Prb-vw-rp7g/видео.html we just uploaded yesterday. Noted on the cheese prawn beehoon request. We hope to make it soon. Have yourself a blessed Christmas, Yvonne!
Love your presentation , excellent job , I'm learning how to put things together and I appreciate videos like your ... Thanks
Thank you so much too. :))

Hi, greetings from Singapore! Nice to hear Singaporean accents and recipes on youtube!
Hi Bassoon. So sorry for our late reply. We just got back from our holiday and the internet connection was really bad for us on the go. Glad to have a fellow Singaporean with us too. High five! We are Singapore! 🖐🏻🖐🏻🖐🏻🖐🏻
I have made fried rice before and found if you add rice to egg to early it is not nice. I like the thought of 80% instead of cooking all the way through, would make it dryer. Never tried the shrimp aspect of it but will try really soon. Good video, thanks.
Thanks for sharing lapetitemoma! Happy new year to you and your family!

One hell of a meal though. Got hungry enough that I ate all the portions on my own, then went back to sleep full and happy. Amazing recipe you got there!

@@spicenpans reading your comment made me laugh...Nasi lemak is actually a type of tradisonal dish in Malaysia..You should search it on youtube
@@adrindazril3913 Your comment gave me a chuckle. Of coz he knows what nasi lemak is, he's Singaporean.
Finally, a recipe that realizes lots of eggs and oil make the best fried rice! Ty!
Thank you so much, Mayxay. High five!! :))
I've had good luck letting my rice dry out in the cooker, rather than using day old rice. Uncovered it takes around 45 minutes if you flip the rice a few times. Mine is a very small basic rice cooker using jasmine rice so your results may vary. Not as good as leaving it in the refrigerator overnight but still decent.
Wow. Thanks so much for sharing, AnxiousGary. Your experience can help many here who don’t have time to prepare the rice earlier. Happy 2019 to you!
I've also heard people have good luck with cooking the rice at a slightly dry mixture, using around 75-80% of the normal amount of water when cooking it and then spreading it out and letting it air dry.
@@arthas640 This was my method if I suddenly want to cook some fried rice but don't have much time 👍🏼
Thank you, Roland, for the simple to follow cooking methods. I have tried your fried rice, Chap cai and sesame chicken recipes. My girls love them all and I told them that I have a great 师傅。 All I need to do is to revise using your videos. Keep up the wonderful work!
I love fried rice and I like the style of your cooking, let’s support our passion for cooking,🙏🙏🙏
I mix the raw eggs with rice first off the stove and cook it on high heat. I got the recipe from ex employee of din tai fung itself.

Enak ya. Aku mau coba ahh
Save the bottom crust. Serve this rice in it (salt fish & ginger with shrimp). Top with chicken/turkey skin chicharrones. Kids always fighting for the crispy crust. Sometimes I just add water or stock to the crust, and made a yummy rice soup to die for! Never enough crust!
Yum. That sounds amazing Sussana
Din tai Fung has the best fried rice I ever had and I came across this video and couldn't be happier. Thanks.
