  • Chinese Fried Rice is a simple and yet difficult to master dish but once you get the hang of it, you can fry this super yummy easy meal anytime.
    This is our Din Tai Fung inspired Shrimp Fried Rice. In case you haven't heard about Din Tai Fung, it is a chain of restaurants originating in Taiwan. Back in 1993, New York Times ranked them as the Top 10 Best Restaurants in the World. In 2010, the restaurant's first branch in Hong Kong at Tsim Sha Tsui was awarded one Michellin star and their second branch at Causeway Bay was also recommended by Michellin Guide. Although Din Tai Fung is known to specialise in xiao long bao (Chinese steamed dumplings), their egg fried rice with pork chop is also really popular amongst diners. Of course that includes us :). We actually stood outside DTF kitchen to figure out what ingredients were used. Opps - I hope we won’t be banned from Din Tai Fung because that’d be tragic. Whenever we dine at Din Tai Fung, fried rice is one of our must-order dishes but instead of ordering shrimp fried rice, we always go for their pork chop fried rice. OMG so good! I'll get Roland to show you how to prepare their pork chop next time.
    Many different cuisines such as Indonesian, Malay, Japanese, Thai etc today all have their own version of fried rice but did you know that fried rice was actually first developed during the Sui Dynasty in China? This means that all variety of fried rice available in the market today can actually trace their origins back to Chinese Fried Rice.
    Sorry I digressed...Back to this recipe - if you don't like prawns, please feel free to omit it.

    Serves 4 - 5 pax
    How to prepare prawns before pan-frying
    ====
    8 - 10 pieces of mid size prawns - deshelled & deveined
    1 teaspoon of sugar
    0.5 teaspoon of baking soda
    Enough water to cover prawns
    Some ice cubes
    Other ingredients
    ===
    Some cooking oil
    6 eggs
    4 cups of cooked Jasmine rice (250ml cup size)
    1.5 teaspoon of chicken stock powder
    1 teaspoon of salt
    1 tablespoon of soya sauce
    2 stalks of spring onion
    A few dashes of white pepper

    I tried this recipe and It's really good!!! Although, instead of using soy sauce, I used Oyster sauce and added sesame oil. Also, I love the fluffiness of the rice. Thank you sooo much!😊

    This is my go to recipe everytime I want fried rice! Its really good, taste like the one I have at chinese restaurants. This recipe is variable, sometimes I change the shrimp to beef or pork, then sometimes I add garlic, and it always tasted good.

    Good morning, friends! Some of you have requested for this Fried rice recipe quite a while ago but Roland only mastered it recently that’s why this took some time. He finally could cook a plate of yummy fried rice that tasted almost like Din Tai Fung. Of course Din Tai Fung is still the best but this is a good alternative. Now I can also cook this myself whenever I feel like having fried rice. Yum! Hope you will enjoy this recipe as much as we did. Let us know how this turned out for you yeah.     Just made it; super easy, super fast, and super good. The only change I made was to add some frozen peas and corn that I had defrosted under the tap. I recommend this highly.

      You are right. Cooking should never be a tedious task. Recently, I wanted to bake my own loaf of bread, so I checked out some RUclips videos. Every one of them had a recipe that took 3-4 hours - from prep to final product. I decided to hit the nearest store and got a loaf within 15 minutes.

    I've been making fried rice for decades and for some reason, I still like clicking videos where people cook fried rice LOL! I think I just like to see all the small variations in how everyone does it. It's one of those dishes that really get personalized after a person has made it a lot of times, so everyone's fried rice is slightly different ^~^

    Just made this. Never knew DTF fried rice could be so simple. I can’t eat prawns so I substituted it with whatever leftover meats that I had in the fridge, mostly chicken. Added some chopped onion as I did not hv any spring onions. It turned out so delicious. I also added garden peas for colour. So yummy ! Thx again Roland.

    I Cooked my rice in “Kee's Seasoning Mix for Hainanese” and it turned out sooooooo good. I didn’t need the chicken powder when frying. You should try it ♥️

    I love this recipe. I like how you mixed the eggs not all the way cooked to the rice. It keeps all the rice separated from each other. I used same day white rice and it was super delicious. Had left overs and when I reheated it it want stuck with each other at all.

    The secret ingredient is actually dried shrimp water. Bring 1/2 cup of water to boil, drop in about 10 dried shrimp, boil for 2 minutes, turn off and cool overnight. Instead of adding soy sauce to your fried rice, add the dried shrimp water. Your shrimp fried rice will be on the next level.

      @MsLuminous1111 some people are allergic to eggs, some to soy sauce, some to msg, some to shellfish. As a former Executive Chef and Operating Partner from Chang's to Fats, and fine dining, I always tell people, if you ever eaten at an Asian restaurant, all the dishes contained some kind of allergy items, from oyster sauce to chicken powder. But you are right, warn people that there are shrimp water in the shrimp fried rice.

      @dao ist shrimp stock is great. But I preferred dry shrimp due to the process it was made, it will give you a more salty flavorful taste, especially when used in lieu of soy sauce.

    I will definitely try this out. I have frozen shrimp in my freezer, and I was wondering what I was going to prepare other than shrimp on a skewer. As Lent is approaching, I hope to get in enough practice to make this recipe by then.
    I noticed one of the comments mentioned that fire allows the wok to be extremely hot which leads to tastier dishes. Recently, I came across a product, NuWave Induction Wok, that is supposed to be as close to using a fire-wok cooking technique as possible. I'll have to save up for that, but in the meantime, I'll use what I have to get the cooking done.

Haven't tried this at Din Tai but don't need to, this is that good 😊 Had never come across the technique of soaking/marinating prawns in sugar/soda, & felt that is key in bringing that traditional restaurant fried rice shrimp's taste & texture. I cooked a big pot so my son relished it for a few meals :) Thank you so so much!

    Love the tips and talking in the video. Picked up the things you said, such as letting the rice absorb the egg before moving on, don't chop the rice, or that the fried rice is done when the grains start jumping.
    Also appreciate that you showed the frying process instead of fast-forwarding, so I could see it takes a while. This is a great video for beginner cooks to follow.
    My 1st attempt is great, love the fried rice. I now have a new dish to cook for gatherings and party.
    I used vegetables instead of prawn as my family is cutting down on meat.
    //Veggie fried rice alternative//
    Instead of prawns, I used 1/3 carrot, a handful of french bean (approx. 6-7 pcs), 1 fresh shiitake mushroom (approx. fist size). Chopped all these veggie finely. Heat up the pan, add 1-2 tsp of oil. While waiting for pan to heat up, sprinkle some salt, mix well. Stir fry veg till cooked and set aside. I added it to the fried rice at the stage where the video added the prawn :)

    I have made fried rice before and found if you add rice to egg to early it is not nice. I like the thought of 80% instead of cooking all the way through, would make it dryer. Never tried the shrimp aspect of it but will try really soon. Good video, thanks.

    this is a great recipe! i fried the peeled prawns along with the prawn heads to give the oil a strong shrimp flavour, and the fried rice turned out really delicious!

    This is so simple must try,
    One of my favourite Chinese dishes king prawn fried rice, I think this was the first dish I ever tried in Chinese cuisine, & still love todate.

      I work at Din Tai Fung their fried rice is amazing with their Chili Oil I was looking for a copy cat recipe and this seems close! They add very few ingredients and use Nishiki White Rice

    I made the horrible mistake of watching this at 3am in the morning. Got so hungry watching this delicious meal getting cooked, I was forced to have to cook this at that hour just to be satisfied.
    One hell of a meal though. Got hungry enough that I ate all the portions on my own, then went back to sleep full and happy. Amazing recipe you got there!

    I tried cooking the shrimp fried rice similar to taiwan Din Tai Fung i recommend to use the long grain instead of jazmin rice its a bit too starchy i mix parsley instead of spring onion its my mistake but the taste is equally good as Din Tai Fung congrats n tnx

    Wow been years trying to perfect a simple fried rice and this recipe worked perfectly for me…. So so close to a Chinese restaurant…. Just one question what ham would you use in yours in you has to put ham? I love ham in fried rice

    I've had good luck letting my rice dry out in the cooker, rather than using day old rice. Uncovered it takes around 45 minutes if you flip the rice a few times. Mine is a very small basic rice cooker using jasmine rice so your results may vary. Not as good as leaving it in the refrigerator overnight but still decent.

      I've also heard people have good luck with cooking the rice at a slightly dry mixture, using around 75-80% of the normal amount of water when cooking it and then spreading it out and letting it air dry.

    Save the bottom crust. Serve this rice in it (salt fish & ginger with shrimp). Top with chicken/turkey skin chicharrones. Kids always fighting for the crispy crust. Sometimes I just add water or stock to the crust, and made a yummy rice soup to die for! Never enough crust!
