Sir - As in our Vmware esx network where we need to configure dhcp..Is it need to configure on esx or switch or create one VM in that we install dhcp(like in this video)

Its basically One DHCP Server ((Maybe VM) or Physical) it does not matter which way you use end of the day its flexible and feasible and easy to use.

It's simple add multiple subnets in config file. However network should be configured in correct way to route the traffic to all the subnets

In configuration file of dhcpd.conf specify the internal (LAN) Ip address, which will start on LAN IP.
