Quick Cooking: Instant Pot Chicken & Potatoes in No Time

  • Here's my super quick and delicious Crispy Paprika Chicken and Potato One Pot Recipe for the Instant Pot Duo Crisp. I made this dish as I discovered I had some defrosted chicken thighs in the fridge just before a trip away - it came out so well and it's definitely added to our mid-week simple supper list here. I hope you like it!

    1 Tbsp Olive Oil
    3-4 chicken thighs
    1 medium onion
    1 clove of garlic
    1 bell pepper (any colour you like)
    2 tsp smoked paprika
    2 tsp chipotle in adobo paste
    1 heaped tsp dried oregano
    3-4 medium potatoes
    8-12 cherry tomatoes
    2 cups of veg or chicken stock
    seasoning to taste

      Ah, thanks so much Greg. Yes I didn't understand it either til a few years ago. The Instant Pot only does as very small batch but is a good way of trying it - especially if you have a few spare strawberries. Amazing!

      @@CookingandCalm I also love the way that your videos take in the reality of life - the unexpected! So helpful to have ideas for when life throws in a surprise or two! PS, thank you for replying, just to mention that autocorrect often changes my name ;) do you have any thoughts on what I can do with chicken thighs in the air fryer with just bell peppers and courgettes? Have been trying to emulate a tray bake but want my chicken crispy!

      Sorry Tasmin - that just be happening all the time to you. I got it this time!
      Thank you - I've not done it and timing will depend on size of chicken thighs but I'd probably go about it by preheating Airfryer to about 180c then add chicken thighs (skin side down) for 10. After 10m flip the thighs and add the veg (which should be coated in whatever oil you use) and after another 10 check if done. If you start with that , hopefully you'll get it more precise after some fiddling. I use instant read thermometer to be safe. Airfryers are small so it will likely work well for 1 portion. if you stack veg too much, they don't cook as evenly and might go a bit soggy or burn. Good luck with the experiment 🔬 😊

I am especially excited to try some of the Indian inspired recipes, as that is one of my favorite ethnic food options. Keep up the good work!

    Looks great, Susan! Can I ask what you use for freezing small portions in? I'm only cooking for one, so it's often eat-some freeze-some.

      Yes you can - I like to freeze in those 'souper cubes' type silicon trays - each 'ice cube' holds about a cup'. For a recipe like this, I remove the chicken from the bone then freeze. If you search "Souper Cubes Silicone Freezer Tray Lakeland" you'll see the ones I mean. I like these cos I can pop out the cubes once frozen and pop into a bag or larger box and use the same trays over and over. 1 cube is about a standard size for bolognaise/chilli type stuff. 2 cubes for soup or stews dependent how hungry you are. If it's larger pieces of meat, I freeze in various size containers including some 'glass lock' - glass with plastic sealable lids. You can get something similar at Ikea now and much cheaper than branded glass lock. I hope that helps.

      Hi again and hope you're well Dolf- just to let you know that I'm posting a video in a bit with a beginner friendly focus - Lentil Soup. Similar to a very old one of mine but updated and with a bit more on things like 'burn notices' when using pressure settings etc. Hope it helps and you're keeping warm over there.       @@CookingandCalm Thanks, Susan. I love lentil soup so I will definitely have a look. Cooked Dutch style pea soup a while ago, which turned out great and yesterday I did a whole chicken the way you recommended it; pressure cooking it first and then air frying. When it's ready to air fry, I also put in a few halved potatoes that have been tossed in oil and herbs. Delicious every time. Tomorrow I'm going to make a curry with leftover chicken. I've been using the duo crisp as a slow cooker also and made some lovely beef stews. I keep it on the high setting after using the sauté function first. Here in County Limerick it has been quite cold but it's going to warm up over the weekend. 12 Degrees Celsius on Sunday will feel like summer after the 5 degrees below zero. :)

    Thanks Susan. Looks really delicious. I've got a thawed, whole chicken that I was going to smoke today, but the weather is not cooperating! Which is perfectly fine, we desperately need the rain. So I think I'll try this recipe with the whole chicken.
    Have a question about the OXO Vegetable Chopper. Have you tried dicing sweet potatoes with it? Wondering if it's strong enough for that if you don't have the potato slices too thickly cut. Enjoy the rest of your weekend! 😊

      Hi Karen. Yes I know what you mean- I've never been so happy to see rain yesterday here. I have done it on some very small more moist sweet potatoes *but* I won't do it regularly as I think it might break to be honest. The ones I get tend to be a bit fibrous. Hope that helps

    Thank you Susan for your videos! I got my Instant pot duo crisp yesterday and I've enjoyed watching your videos. Quick question though: on the manual it did say using the air fryer lid with moist food could cause some problems. Does this only apply to the Airfrying mode of cooking and not the others like the grill which you've used in this video?

      I'd check with Instant pot to be sure. I've not seen this in my manual but it is quite old now - it does say if white smoke is escaping then it could be due to moist food and to pat it dry. I've not had any problems like this and treat it a bit like I'd treat a broiler/grill - making sure the liquid level is nowhere near the element in the lid and lifting the lid often to check the food and let out steam - but that's not to say it's the right thing to do, especially with all of the variations in Instant Pots out there ,so do check. You could just tip out the liquid and veggies & pop the thighs back in for it's air fry at the end as an alternative too. I hope you enjoy your new Instant Pot!

      Thanks Jim, yes if I was just cooking the chicken thighs I'd definitely do this but as I have a lot of liquid and potatoes in the pot, it's better to just use the main bowl, and the 'air fry' is more like putting a pan of something under the grill (broiler). I hope that helps.

      Hi Cathy 👋 , yes - it's chipotle chillis in adobo so gives it that smokey heat. Really delicious! Seen it in a lot of Mexican/U.S. recipes but not seen it here in the uk until recently and now obsessed with it :)

    Just ordered an instant pot duo. Loving your channel. I have a list of things I wanted to ask if you’d cooked- jacket potato, paella, risotto, frozen breaded fish, pies (pastry), spring rolls? Would love to know your thoughts!!

      Hi there. Now let's see.... jacket potato? Yes in Airfryer basket, roast. Paella - no . Risotto - yes. Works brilliantly and no stirring. Lots of recipes online including an ip official. Frozen fish - yes, Airfryer with reduced temp and time as it cooks very fast. Pies - I've used Airfryer function as oven for small pies . Limited space. Spring rolls - on my list to try soon! Welcome to instant potting - a lot of it is about experimenting - you'll learn fast 😊👍

    A friend of mine is selling an instant pot but it's missing the broil/dehydration tray is it something I need in most recipes? Or can I get by without one?

      I'd say it's a 'good to have' as it opens up some extra functions but I think you can totally get by without as a beginner- you can still use airfry and get used to all that pressure cooking money-saving goodness! Instant Pot sell the tray as a spare (it's out of stock in UK) or you might find one on ebay if you want one later. Just my opinion but I hope that helps.

      If it's just the tray itself, it fits onto the airfryer basket and means you can use it as a sort of grill ( it raises the food). It's also used for dehydrating , though I bought a separate and better thing for that . Have a look at this video to give you a sense of it. ruclips.net/video/njIruM9CMmE/видео.html .
