    In my vision of reality, that is a plate column (or other names). Any column has passive reflux. Adding a dephlegmator allows you to control the reflux in that column. If there is packing in that column, or plates in that column, there is a multiplication of "steps" that the vapor is multiplied. I expected the discussion to focus on the multiplication of "phase change steps". In fact a simple (empty) tube filled with screen, marbles, or other packing can act as effectively as phase changes as the bubble plates...

    Do you monitor water temp ex dephlegmator to assist control the ABV your letting through?

      Hi Matt, monitoring cooling temps can be a helpful bit of data. However, unless you have the ability to provide consistent, uniform cooling media temps for the duration of your run, the cooling media temps will not provide dependable feedback without also factoring in the flow rate of your cooling media. In this instance it would be best to monitor alcohol vapor temps at the top of the column and adjust the cooling media flow rate accordingly.
