      唔熟唔食 Cook King Room ,評價就唔敢啦,其實煑嘢食,大家都會有少少唔同,各師名法,各有特色,例如村料,煑的時間,配料份量都會煑出不同味道,見你都煑得有文有路,可能煑得多的關係,總之好食就得啦,飽参翅肚係王牌美食,要好好保持下去,一定要。

    Good recipe.
    I have watched some of your other recipe videos, have three questions:
    1. Would you consider doing a video on the selection of sous vide equipment and general using instructions?
    2. You mentioned that you went to England for schooling, how did you managed English with American accent?
    3. Where and how did you learn cooking?

      thanks for your comment. I think it's a good idea to show the general use of sous vide machine and with some associated accessories or equipments. I didn't actally learn how to cook, as you can see from some of my other videos that I didn't hold the knife in a proper way. I don't speak very good English as well as my accent, as I have only spent a few years in Nottingham during uni life. I wish I could have a proper accent but well... lol , and I was born in HK which is quite difficult to have a proper posh accent. My accent is from where I've been taugh in HK, not particularly American I guess, HK is just a place with many different accents... Can I ask, are you from HK too? :)

    拍攝手法及解說(英文字幕)有點像"煮食男人UNCLE BOB" , 加油! 不過魚翅在現今社會已不合潮流,但在家偶爾煮給家人吃也OK!

      謝謝留言,拍攝手法我開始頻道前有請教過BOB叔的,至於製作時加入的字幕是imovie 的樣式, 這個我認為是最好看的了, 我知道跟他真的有點像, 可能他現在都很生氣 lol 但我盡量都不會完全抄他的食譜, 以示尊重.
      至於食魚翅相關的食譜, 我應該都不會再出, 希望只此一次 XD.

      我沒有最快的方法,我用的方法是猛火隔水蒸魚翅,每一小時做一個單位。蒸完立即將魚翅浸冰水。認為不夠軟再做一次。這方法可保持鮮翅膠質不會溶於滾水中,而家急速冷卻可令魚翅減少散開而影響外觀的方法。
      有時候,海味店會叫你用熱水浸,這樣會快,但魚翅會收縮得好緊要及容易散

      rehydrate daily until slightly soft, then steam with ginger and scallions u til they curled up then shock into iced water. it will be ready to cook. repeat the steaming process if necessary

    一定要用勾翅(即條魚尾部份),千其唔好用胸翅,背翅,復翅來煮,盞浪費材料,時間和心機,出來的口感差很遠。

      如用電子湯煲,用保溫模式煮20小時,如果用明火就要焗火方式,煮滾後最細火蓋上煮半小時,熄火焗3小時,重複3次

    我小時候也喜歡吃魚翅,但是後來我知道原來吃魚翅會令海洋生態受損 ,而且不環保,也會令氣候變化更難預測,也會令全球暖化問題更嚴重,香港天文臺的員工一樣不吃魚翅,天文臺伴我成長,他們(天文臺)每天為香港人報天氣,當然要聽他們的話,不吃魚翅,吃素翅
